If you are someone who is concerned about your intake of foods high on the Glycemic Index or high on the Glycemic Load chart, this video will help you understand just how valuable vegetable gardening really is, as we teach you about some of the many vegetables that are very low in both of these cases.
In this video, we talk about the difference between Glycemic Index vs Glycemic Load, and we talk about 12 vegetables that are great for you and won't spike your blood sugar levels.
We ranked these based on their low glycemic load and also on their nutritional content, so please understand that we had to leave some great vegetables off our list, and the data we used is based on averages we found looking at multiple sites.

Great list, now I know what I must grow more. I wonder how wild vegetables would fit into it. I eat a lot of dandelion greens, violet leaves, lamb's quarters, curly dock, etc. Those free vegetables don't make it onto any list for a comparison. Maybe if a vegetable grows wild and is not being paid for it is not worth comparing. My sister things it's not even worth eating, LOL.

no sunchokes on the list? I'm not sure how densely nutritious they are, but they are great for diabetics. Easy to grow, very versatile. Mashed they make a good replacement for potatoes

please how do you maintain your greenstalks indoors? Do you water everyday , do you need a heater and fan? pls help, I am moving to an apartment and can only grow indoors for a while
We keep ours in our grow area, so we have a grow tent and grow lights in part of it, and the temp is pretty consistent at around 72 Fahrenheit. We also have fans running to keep circulation going. As far as watering, I check moisture levels pretty regularly and water as needed, but I don't overwater to make a mess out of the bottom. If you use a spinner base, you can fit a small plastic container off to the side and let excess water run into it, to avoid water issues.
