Kasundi is a very popular pickle or sauce of Bengal. Various fried foods, vegetables and some other items are eaten with Kasundi in Bengali homes. It consists of fermented mustard seeds, spices and sometimes a crunchy paste of dried mangoes, dried Indian plums and olives.
Kasundi is a sauce made by fermenting mustard seeds and is much darker and sharper than other types of mustard sauce. It is extremely pungent, capable of stimulating the nasal passages and bringing tears to the eyes in the same way as Japanese wasabi. In modern times, kasundi is mixed with various Bengali fried snacks like cutlets and chops as it adds a richness and crunch to the taste. Kasundi can also be served as a dip with other snacks such as sandwiches, pizzas, burgers, omelettes, salads etc. Although traditionally it was not served with these mentioned items or at home in such quantities as it is seen today. In the past, it was carefully preserved, served sparingly, and served with hot fried greens, never with fish or meat. The pairing of kasundi and non-vegetarian dishes is more common in modern hotels and fast food restaurants. This trend first started when restaurants started serving Fish Kabiraji with Kasundi.
