    About Pai:
    Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the RUclips channel Pailin's Kitchen.
    Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
    After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via RUclips videos, her cookbook, and cooking classes.     Just made this from your book with really inexpensive bone in chicken thighs. I tested it on my 7 year old son. One piece of yours vs one piece of plain with a pinch of salt. I got the thumbs up for yours. My son ate it down to the bone and did not touch the 'control' piece after the first bite. My wife gets off work in an hour or so. I have more thighs marinating. This is a real winner and so are your books. Thank you so much!

    My go-to for faux grill is: pan-sear the chicken on both sides (approx 2 minutes each) till you get the golden caramelisation , then bake in the oven (convection 350F) for about 20 minutes.

    I have no clue how I have never heard of toasted rice powder! I love to toast my rice. I now realize that's probably what is in my favorite toasted rice tea. Thanks so much! I can now just make it this way, & add it to my green or black tea.

    I've eaten a lot of faith yang in my sixty-plus years but I've never made it. I followed your recipe (mostly) and the results were astounding. It truly is the ultimate gai yang or at least the best I have ever had. It has earned its place on my list of what to make for company. Thanks Pai!

    Pai, I have been watching you for sometime now and your cooking keep me glued. Am a Nigerian but I like good cooking and cheerful personality. No doubt all your meals will be yummy cos they are made with joy. I have learnt the art of marinating, and garlic oil from you now, I actually enjoy that garlicky taste in my eggs.     P’Pai I made these yesterday with 3 whole chicken for my family day in which i tripled the recipe and quadrupled the nam jim jeaw ratio, everyone loved it and namjim jeaw finished within 30 minutes even when i intentionally made it extra spicy

    This recipe is PERFECTION! Brings back so many memories (Peace Corps, Mahasarakham)! And the recommendation to use indirect heat is spot on. I tried 4 other recipes before discovering this one. None were even close. Made it for a dinner party and people loved it. And the Nam Jim Jeaw. My guests were all over that. Coming back for more ideas. Thanks!

    Thanks for sharing. I enjoy watching your cooking videos. Im definitely gonna try this receipe. I cant seem to find white peppercorn. Could i substitute it with white pepper? Also, any tips on cooking this in a oven?

    great video as always! its winter here in melbourne, so alot of braised dishes for dinner such as moo parlow. but this will be the 1st dish i cook when the sun is shining and the weather is alot better. keep up the vids so enjoyable to watch.

    This looks so incredibly delicious! We have to ask though (having the same bbq) how have you kept yours so nice and white on top? Ours looks a little.... uhhh... well-used and quite browned.

    Going to do this today with Sticky rice, but I am going to try to Sous Vide the marinated chicken to try and keep the meat really moist then char the outside on a charcoal hibachi.......ohhhhh can't wait.
    Your turiorials are awesome; well filmed; presented and most importantly, real authentic Thai tasting recipes. Nice work!

    "Jaew" is the lao word for dipping sauce. It is common in the Issan region. Grilled chicken and sticky and papaya salad is one of my favorite meal.

    I've only ever used a whole chicken in the InstantPot to make broth & pulled chicken bits for whatever... but I think this will be my new go-to 🤤
    I'll miss the bone broth, but I think the roasted flavors + dipping sauce will more than make up for it!!😻😻😻

    Thank you so much! Easy and taste great! The chicken was delicious with aromatic herbs. The lemongrass became unpleasant texture while chewing. I will try it with big chunk of lemongrass next time, so I could remove it out when it's done.

      It goes back generations, same everywhere even in Europe... except maybe Scandinavia. Lighter skin tones usually meant higher social status, so rare and sort after since the rich didn't have to go get baked in the sun working manual labour outdoors or in the fields farming. England up until the late 20th century still prefered their women pale and plump...
      It's only in the 21st century where lots of people now work in offices sat on our arses most the day in the shade getting fat that people realised this unhealthy trend is doing us more harm than good. The middle class in Thailand are a little slow to catch up on this point. Most are still of the attitude that "well to do" women (and to a certain extent men) should never have to lift a finger... being attended to by คนใช้ (servants) or the men in thier lives 24/7. Thankfully that's beginning to change and more are going to the gym and being more active in the sun. Muscular guys weren't even considered desirable until recently...

    Can you spatchcock a chicken (remove the backbone to flatten it out) marinade it then cook it indirect on a charcoal grill?

    Excellent point about marinating in a plastic bag & putting it in a dish to catch any leaks. Happened to me. Refrigerator smelled like teriyaki for a few days. Sticky teriyaki sauce is a mess to clean up. LOL.

    The barbecue season is winter here because our winter isn't that cold and you can get warm around the fire. We go to country parks, where the governement sets up permanent stone grills. We bring with us charcoal, meat, fish balls, seafood and super long disposable forks with a wooden handle. We light a fire in the grill and sit around it. The grills look very different from the one you use in the video: they're round in shape, don't have a cover but do have grids that are for your charcoal instead of your food. Everyone gets one of those super long forks and cook the meat over the fire with it. How I wish I could go for a BBQ after this pandemic!

    Super delicious recipe and likeable presentation. Yet instead of putting the chicken in a plastic bag with the marinade, and after marinating back into the pan it was before, why not put the marinade directly into the pan with the chicken? Would save an unnecessary step of work and a huge piece of plastic waste.

    "Jeow" is Lao and it means the same thing, "dipping sauce (for sticky rice)."
