  • The battle is on! This week, we bring you not one but two delicious recipes. First, Dave shows you a yummy recipe for ham and ricotta calzone. Then Todd shows you how to make a keto-friendly pizza, with a crust made from ground chicken! Let us know your favorite!
    Ham and Ricotta Calzone
    Dough:
    2 cups flour
    1 pkg dry yeast
    1 tsp salt
    1 tsp sugar
    ¾ cup cold or slightly warm water
    2 tsp oil
    Filling:
    ¾ cup ricotta
    ¾ cup shredded mozzarella
    thinly sliced ham
    sautéed mushrooms
    Dough:
    • In a large bowl, whisk together the flour, yeast, salt and sugar. Add the water and oil and mix until all the flour is incorporated.
    • Cover with plastic wrap and let rise at room temperature, until the dough has doubled in volume.
    • Scrape the dough out onto a floured surface. Shape into a ball.
    • Cover the dough ball with a damp towel until ready to use.
    • Press out into a 12” - 14”circle on a pizza pan or baking sheet.
    Filling:
    • Preheat the oven to 400°.
    • Place the sliced ham and mushrooms over 1 half of the pizza dough.
    • Spread the ricotta over the ham and mushrooms. Sprinkle the mozzarella over that.
    • Fold the dough over the filling to form a half circle. Seal the edge to close. Cut a few small slits in the top.
    • Bake at 400° for 15-25 minutes until golden brown on top.
    • Serve with pizza sauce for dipping.
    Keto Chicken Crust Pizza
    1 lb ground chicken
    ½ cup shredded mozzarella
    ¼ cup grated parmesan
    3 cloves garlic, minced
    1 tsp Italian seasoning
    ½ tsp salt
    ¼ tsp black pepper
    • Preheat oven to 400°. Line a baking sheet with parchment paper.
    • Mix all ingredients in a medium sized bowl until fully combined.
    • Place the chicken mixture between two pieces of parchment paper. Gently press on the top parchment and flatten the chicken into a square or rectangle about 3/8” thick.
    • Remove the top piece of parchment paper.
    • Bake at 400° for 25-45 minutes until the edges just start to turn brown.
    • Add your choice of sauce, cheese and toppings, and bake just until toppings are heated and cheese is melted.
    • Slice and serve.
