I can't believe you just made a lasagna in a frying pan in your car without a sink to clean up! That is some real dedication to good food!! The veggies are very wet but that probably helped cook the noodles. Maybe removing the tin foil the last 5 minutes or so could have helped dry out the top

Love seeing you actually cook real foods, real meals in your van. Husband and I are not fast food people so for our roadtripping we always fix real meals. I find that many favorite Cast Iron Skillet recipes are easy to adapt for cooking inside of NON CAST IRON Skillets. The key is having a good vented lid for your Skillet and use a Splatter Guard between the Skillet and Skillet Lid. Sounds a bit odd but it works like a charm.

That lasagna looks delicious! What a great idea! I'm not 100% sure of your diet choices, but we (Italians of Naples) put grated parmigiana cheese and an egg in the ricotta mix. It 'fluffs' it up a bit. The spinach and mushroom looks SO good I'm definitely going to try that layer as well. Wow! it looks delicious! One thing I've done to help soak up the extra moisture is to sprinkle grated pharmasean (the powdery kind in a shaker jar) onto each layer . It does help make it drier. But, congrats on getting it done---I bet it tastes amazing!! xx
It also helps to let it sit for a while before digging in, because even when baked in an oven it comes out a bit soupy as well. But heck, like you said, you can’t go wrong with lasagna, all the ingredients you used ROCK! I probably would have added some Italian sausage, but that’s all. Great job! 👍👍

I remember when my husband was in college we lived in a studio apt the size of a closet, the kitchen was so micro, but I did my best cooking in this tiny kitchen. Then we moved out and my kitchen got a little bigger and the less creative I became. Now my kitchen is large and I really have no inspiration. There’s something grand about small spaces that make me feel secure and productive. Anyways, thank you for sharing your delicious meal with us.

Hi Rowan, yes Home Depot would have them, they should say 'self tapping' on the package, or they have a fine sharp point on one end and 10mm long, they will screw into the roof lining no problem

Very impressed with the stovetop lasagna. Just as a suggestion frozen spinach holds a lot of water, chopping up fresh baby spinach and maybe doing half frozen and half fresh might reduce the water if you decide to make it next time.or go all fresh and have a bag of frozen veggies for something else. Just a suggestion. And no need to do the extra water because the sauce is liquid enough. But it looked very yummy and that is all that matters. Also, have you tried the egg noodles from trader joes, in the refrigerated section, also gluten free and so good. Great for 1 or 2 servings. 😊

Our recipe is the lasagna noodles cooked hamburger meat marinara mozzarella cheese Parmesan cheese and why are twice with mozzarella on top next time if you didn't have it this time you could use your oven and bake it

Maybe just wet the noodles a liittle bit when ur layering them instead of pourng wate into the skillet because i think between that much water, the sauce and the cheeses especially the ricotta is what made it come out too soupy. Thats what i'm guessing, but hey, you just gave me a different easier way to make lazzagna, ty 😊
Rowan you put a little too much water in the sauce jar which I think made it a little water. It's also hard to get a little crusty top on the stove. It looked good though. I love lasagna.
You can buy a cooler from Cabelas or Bass Pro that runs off car battery if you ecer replace car battery go with a 750 or 800 cca. They have more capacity. Caelrs come with smallest capacity they can get by with❤❤

When using frozen spinach, I think it's often recommended that you squeeze the water out before adding it for recipes like this :)

Did you use any Italian seasonings? Like a basil/oregano combination. It looks delish!
I put hamburger and Italian sausage in my lasagna. After I cook the meat I add the ricotta to melt into the meat. Tastes awesome.

I think because the spinach was frozen it had alot of water in it so you may not have needed to add water or as much water maybe?
You shouldn't have added the water. In the marinara jar that's what made it watery but it looked good
How about precooking everything and then layering up but upside down so the cheese is on the bottom of the pan near the heat so it gets browned?
