Macaron Sticks / Pops Tutorial- Rosie's Dessert Spot

  • In this tutorial I demonstrate how to create these delicious and pretty looking macaron pops! Recipe and details are down below. Click "show more" or the little black arrow under the video if viewing from your phone.

    MACARON RECIPE:
    130 grams egg white (about 4 eggs)
    pinch of salt
    1/2 teaspoon vanilla extract
    4 tablespoons caster sugar
    230 grams icing sugar
    115 grams almond meal
    Colours of your choice in gel or powder form for best results (I used regal purple, turquoise and soft pink in the Americolour gel food colour range)
    TO BAKE THE MACARONS:
    For the mini macarons (2cm in size) I bake mine at 110 degrees Celsius with the fan on for approximately 12 to 14 minutes. I rotate them at the 7 minute mark.
    For the 2.5cm size macarons I bake mine at 120 degrees Celsius with the fan on for 16 minutes and rotate them at the 8 minute mark
    for the 3cm macarons I bake them at 130 degrees Celcius with the fan on for 18 to 20 minutes. These take a little bit longer. Rotate them at the 9 minute mark.
    If your oven doesn't have a fan, just add 10 degrees Celcius to the temperature. So if with the fan on you bake them at 130 degrees, you would have to bake them at 140 degrees without the fan on.
    To decorate:
    Gold leaf
    Viola Flowers
    wafer paper which was cut using a butterfly punch

    This is the best macaron recipe ever. I tried macarons which are from this recipe taste was incredible.

    Every time I see someone make perfect macarons I cry a bit on the inside. Mine always crack.
    I will try this method. It's the first time I've ever heard of using an oven fan.

    Just beautiful! although i will have to do some research as to where i can buy the edible flowers, I live in Louisiana and haven't found many shops that carry edible flowers.

      Hmm sometimes you can find them at the markets rather than the shops. Or you may need to order them in from an organic florist ahead of time. I hope you are able to find them!

    I've made macaroons 6 times and I only managed to get them right ones. I don't know what i'm doing wrong ? I usually let them rest for three hours, but I don't know if that is necessary ? does it help to mix it trough as short as possible ? or is there another secret ?

    btw do we need to put the batter for 30 mins rest before baking them?
    i was told this is to create "the feet"?

      +Mahaki Kitchen Yes that's right :) it also helps them not to crack when baking. You can leave them at room temp but I prefer it with the fan, I feel like the air that passes over them helps to dry the outside faster.

      +Arianna Sanchez thank you so much Arianna! I inset a circle into Microsoft word, then I line them up, select them all and go to format. From there I can choose the measurements I would like to make them in the top right hand side. You can just type in the specific measurements, and off you go :)

    Rosie how did you set your oven to dry them before baking? Mine always cracks because the shells arent dried evenly 😫😫😫 helpp

      Hi Arina, honestly I don't switch on the temperature at all, I use turn on the light and fan :) I find the fan helps to pass air in the oven and dries the tops faster. They will definitely stop cracking if the tops are dry to the touch before baking :)

      +h1sname1sunknown No, just to dry the outer shell :) I then bake them in my lower oven once the top of the macarons become hard / are no longer sticky.

      +Rosie's Dessert Spot I tried to bake macaroons for two times and bough times they haven't risen! They were flat and have caught a tan. I think I need to lower the degrees. And the second thing: I added less sugar, than was written, may it cause them not to rise? I don't like very sweet cookies

      +Lola Benito she pronounces 'almond' as its spelt, and 'sandwich' she says it in an australian accent - just like how australias say 'straya. main thing is we understand what rosie is saying, nothing wrong with it at all.

    Is Caster sugar the same as granulated sugar?

      Caster sugar is finer than a regular sugar. If you can't find one just put a regular sugar in a food processor and pulse it a few times.

      Theres no caster sugar in macarons. They only have icing sugar

    My macarons looked great when they were done and tasted just as good but after 3 days in the fridge (I was told they need to be refrigerated that long so the flavors can mingle) they were all cracked :(
