Clatitele dulci frantuzesti se numesc crepes, iar cele sarate, gallete. Una dintre cele mai spectaculoase clatite se numesc „crepes Suzette”, flambate in lichior si suc de portocale. In Franta, pe 2 februarie este sarbatoarea „La Chandeleur” (Ziua Binecuvantarii Fecioarei Maria).
Traditia cere ca la aceasta sarbatoare sa se serveasca clatite, din acest motiv aceasta zi mai poarta denumirea si de „Ziua Clatitelor”. Legenda spune ca daca reusesti in aceasta zi sa arunci in aer o clatita cu mana dreapta si in acelasi timp sa tii o moneda de aur in mana stanga, vei avea parte de bogatie tot anul.
Chiar si englezii au o sarbatoare dedicata clatitelor: Shrove Tuesday sau Pancake Tuesday

Descopera mai jos noua dintre cele mai gustoase si populare retete de clatite:
Reteta clasica de clatite, pas cu pas
Ingrediente:
3 oua;
300 g de faina;
300 ml de lapte;
250-300 ml de apa minerala;
3 linguri de unt topit (optional);
1 praf de sare;
optional: 1-3 (maximum) linguri zahar sau dupa gust;
arome: 1 lingurita extract de vanilie sau un plic de zahar vanilat si, daca iti place, putina coaja de lamaie rasa. Aromele se adauga doar daca vrei sa faci clatite dulci;
aproximativ 50 de ml de ulei pentru prajit;
apa minerala sau laptele se pot inlocui si cu apa simpla, insa clatitele nu vor iesi la fel de pufoase.
Mod de preparare:
Primul si cel mai important lucru pe care trebuie sa-l ai in vedere este tigaia. Numai o tigaie buna, de calitate, va asigura o experienta culinara deosebita, dar si mai putin timp pierdut in bucatarie.
O tigaie potrivita pentru prepararea clatitelor are coada lunga si peretii laterali nu foarte inalti. Trebuie sa te asiguri ca aceasta nu "prinde" aluatul. Tigaile moderne, din teflon, sunt ideale, dar si una clasica, neagra, cum gasesti prin bucataria bunicii isi va face treaba bine.
Sa trecem la prepararea propriu-zisa a aluatului pentru clatite. In primul rand, trebuie sa stii ca acest tip de aluat este unul foarte adaptabil. Daca nu ai lapte, de exemplu, clatitele pot fi preparate simplu si doar cu apa minerala. Diferenta de gust va fi foarte mica, iar clatitele mai pufoase si mai poroase. Daca nu ai trei oua, aluatul poate fi pregatit si cu doua sau chiar cu unul, daca acesta este mai mare. Poti incerca si combinatii de tipul 1 ou si un albus, 1 ou si doua galbenusuri etc., cu rezultate la fel de gustoase. Iar apa minerala poate fi substituita cu lapte sau cu apa simpla.
Poti adauga in aluat si putina grasime - unt topit sau ulei, de exemplu, in jur de trei linguri. Daca vrei un aluat mai usor, insa, evita acest ingredient. Clatitele pot fi prajite in ulei, in unt topit sau intr-o combinatie dintre cele doua. Daca dispui insa de o tigaie moderna, ai posibilitatea sa coci clatitele cu zero grasime.
Ia asadar un castron, sparge ouale intregi si bate-le impreuna cu sarea. Se adauga apoi faina, alternativ cu laptele. Compozitia se amesteca bine cu telul dupa fiecare transa. Daca vrei sa folosesti arome, adauga de la inceput extractul de vanilie si zaharul vanilat. Nu exagera insa cu zaharul, pentru ca acesta se caramelizeaza in tigaie si vei obtine clatite negricioase. Compozitia se amesteca bine cu telul, cu lingura sau cu un mixer si se insista asupra cocoloaselor.
Pont: daca folosesti un mixer, toate ingredientele se adauga de la inceput in castron si se amesteca pana cand compozitia devine neteda.
Daca nu folosesti un mixer, dupa ce ai adaugat aromele, este timpul sa adaugi, treptat, cantitatea de lapte ramasa, apa minerala si untul topit, dar nu fierbinte. Apa minerala se adauga pe rand, pentru a adapta consistenta aluatului. In tot acest timp trebuie sa amesteci energic.
La final, aluatul trebuie sa fie lipsit de cocoloase, mai lichid daca vrei clatite subtiri si mai gros, daca vrei clatite mai groase.
Pe masura ce sta, acest tip de aluat se va ingrosa. Consistenta lui trebuie verificata mereu, daca vrei ca desertul sa-ti iasa perfect. Poti adauga putin lichid de fiecare data cand simti ca si-a modificat consistenta.
Acum poti trece la coacerea clatitelor. Incinge bine tigaia si unge suprafata acesteia cu grasime. Poti folosi o pensula, daca nu vrei clatite foarte unsuroase.
Ia tigaia incinsa in mana stanga si, cu un polonic sau o cana, toarna compozitia in tigaie. Aceasta trebuie sa sfaraie. In acelasi timp, roteste tigaia astfel incat aluatul sa se aranjeze uniform. Cantitatea de aluat trebuie sa acopere intreaga suprafata a tigaii.
Este momentul sa asezi tigaia deasupra focului. Cand suprafata vizibila a aluatului isi va pierde luciul, iar marginile clatitei incep sa prinda o culoare aurie, este timpul sa intorci clatita. Poti folosi pentru asta o spatula de lemn sau, daca ai indemanare, poti arunca clatita in sus.
Dupa ce se intoarce, clatita se mai coace putin, pana cand da semne de rumenire si pe partea expusa la foc.
Clatitele se asaza una peste alta, pe o farfurie, pe masura ce sunt coapte.
Reteta clasica de clatite dicteaza ca la final acestea sa fie umplute cu gem sau dulceata. Clatitele se pot rula, se pot impacheta sau se pot aranja sub forma de tort.​@@mihmihai13
