Very interesting. I'm surprised the lids don't pop off during fermentation, which causes gases to form. My aunt made this, only with just cabbage and salt. The salt drew water out of tht cabbage, and voila, brine. It sat on the autumn porch in a big crock, weighed down with a plate and rock. Turned out amazingly tangy and delicious. I drank the juice happily.

But they're both a fraction of the size of the one You were using. After I left kitchen I got into the old dishes (Peasant Food?) That My Grannies and Mum used to make. 👍❤️🏴!

I’m from Ukraine too. U can add less or substitute sugar with honey, or don’t add it at all. Sugar speeds farmination process. Sweetness comes from carrot too
Pamiętam jak kiedyś kisiłem tak kapustę u mojej świętej pamięci Babci... Dalej tak robią moi rodzice tylko z kupowanej i świeżo posiekanej kapusty - beczka 80 litrów i ubijanie, deski i na koniec kamień :). Mimo to, gdzieś brakuje tego elementu szatkowania... Kiszona kapusta - pychota, szczególnie sok w pierwszych fazach fermentacji a później kwas... :) POZDRAWIAM SERDECZNIE

I never use any extra water to make sauerkraut, just sea salt and nothing else just a layer of cabbage a few grams of salt pressing it then another layer of cabbage and a few grams of salt and pressing it hard again till the moist get out of the cabbage And that is your salty water.

По перше цукор її робить м'якою , по друге - ваша гірка ( бо гіркоту ви не випустили ) і морква не додається зразу 😁 Мені колись ще років з 35 тому одна бабця показала рецепт своєї прабабці - ото смачна. Я не одноразово вигравав спори , люди не вірили що навесні може бути капуста як щойно нарізана - хрустка, тверда і соковита. 😉
