    I’ve been going to college again after 7 years. I’ve taken a few biology classes at Utah State University and I find these topics a lot more interesting now that I understand more of the complicated science behind the topics!

    I love this quick intro to nutrition science basics! I'd love to see more videos about diet science. I think some diets avoid "typical" carbohydrates (sugar, bread) and say it allows for smoother blood sugar regulation. As far as I know, that's totally valid! It would be cool to go through a handful of common diet claims and do a busted/plausible/confirmed type of analysis. Thanks for the video! =)

      Animal fats are muuuch more calorically dense than carbs from plant sources!
      fats=9 calories per gram
      carbs=4 calories per gram (+plus fiber and water in plants)
      essentially you can and should eat as many natural carbs as you want without worrying about getting fat!!

    Carbohydrates are not the enemy. We need at least one of them: glucose. It is the universal energy for organisms. They're not so bad as long as they are consumed with other nutrients, such as fibre, which lowers absorption of them.
    SciShow needs to do a video on dietary fibre.

      @@Seanonyoutube Dietary fibre includes certain carbohydrates, but is not exclusively a carbohydrate. It is defined as plant components not broken down by human digestive enzymes and includes lignin and resistant starch, neither of which are carbohydrates.

    So you explained the chemical make up of carbohydrates quite well. Yet you said nothing on how the human body regulates energy storage and utilization. Yet energy storage and utilization is absolutely crucial to what makes for a healthful diet or not. Energy storage and utilization is regulated by the endocrine system...your hormones. Insulin is the only hormone that tells your body to burn sugar and store fat. All your other hormones tells your body to burn fat as fuel. So lowering your carbohydrate intake (to 20 grams or less per day) lowers your insulin levels. This causes your body's other hormone levels to go up, allowing you to enter into fat-burning mode, which is known as ketosis. Ketosis because your liver converts fat into ketones, which are water soluble and can thus enter the blood directly, unlike fatty acids. On top of that, carbohtdrates are 100% non-essential. Your body only needs about 100 grams ish a day? We can get that amount from protein, and can store upto 5x that amount in our body anyway. Humans can go their entire lives without a single bite of pure carbohydrate and be perfectly happy and healthy. The same cannot be said of fat. Stop eating fat completely, and YOU WILL DIE. It is absolutely crucial for life. Your brain is 2/3rds fat and 1/5 cholesterol, your lungs & nerves are coated in fat, your hormones are made out of cholesterol, all of your cell membranes are made out of half fat and half cholesterol. Humans are built out of fat, not carbohydrates...and that's why we can store an unlimited amount of fat. If it were the enemy, why can we store it in unlimited amounts? If carbs were so crucial, why can we store so little of it? That doesn't make much sense.

    Good video and great job talking sense about a subject that many people are hysterical about and tend to ignore the science almost completely. However, I do have one nit-pick: carbohydrates are not a "macronutrient that you need to live."
    Unlike essential nutrients such as the essential amino acids and the omega fatty acids, carbohydrates need not be consumed in the diet. Yes, one's brain does need glucose but after an adaptation period, it can derive as much as 75% of its energy needs from ketone bodies created from fat metabolism. Glucose is required for the remaining 25% but it can be produced in the liver via gluconeognensis from glycerol (a byproduct of fat metabolism) or from certain amino acids (alanine, glutamine, etc.). So while a small amount is required, it can be produced by the body and is therefore not an essential nutrient (which must be consumed in the diet).
    That said, it would be difficult to imagine a diet, with the possible exception of complete starvation, that did not include at least a small amount of carbohydrates. Also, at least some carbohydrates in the forms of soluble and insoluble fiber, plus probably some digestible carbohydrate, would be included in an optimal diet.

    carbs aren't bad, but the amounts we are eating them is. When we evolved there wasn't anything that contained as much starch and Sugar than nowadays meals. Even cereal and fruits didnÄt contain as much carbs than todays, i am not even talking about Sugar.

      +UltraJordanGaming Cite source, please. Virtually every caloric drink we drink gets those calories from carbs. Cereals (in the grain sense, rather than the Frosted Flakes sense) are the basis for many "staples" across cultures. A bigmac meal at McDonald's is almost entirely carbs. Protein in the beef, fat in the cheese and oils. The rest is pretty much all carbs.

      +Living Lifeform that's what I said we did eat carbs and we also ate a lot of grain, but the grain didn't contain half as much starch. As well as the fruits weren't as sweet. I study molecular Biology, I am quite sure about the breeding of cereals. And as I said there wasn't any sugar.

    I was part of a group in my small group communications class and we had to all pick a topic and each do a presentation on something from that topic. My group chose Nutrition and we had Vitamins, Water, Protein, and I picked Carbs. I had fun talking about the bad and following it up with the good making carbs seem like an anti-hero of Nutrition while the other 3 were the traditional good guys.

      With no fat in your diet you will become very depressed. When this happens just go back to meat, it will still be there for you. You will feel lots better. And it is cheaper than anti depressants.

      If you are eating processed carbs or white rice/ white bread etc, your insulin spikes and you feel tired. However, they are digested quickly and that is why you feel hungry faster. You can fix this by eating non-processed whole grain products, which have tons of fiber or by eating green vegetables and fruits.

      +Phillip Morrison carbohydrates increase your metabolic rate also high fibre foods like the ones mentioned digest quickly and carbohydrates for that matter, so your stomach gets empty more quickly. As for tiredness and fatigue I agree with the comments above, however I think if you ate high carbohydrate more regularly you would become more tolerant to it.

      Will Adam There's nothing wrong with starches. There's nothing wrong with potatoes. You can only be worried about blood sugar spikes when you are diabetic. But there are many pastas and breads that are bad for us.

      Woah woah: think about it: you eat more or less, 3 meals a day; so would it not make sense that you poop 3 times a day? (Well actually once a day is good 'nough coz it takes 3-7 hours to digest food, and we can 'hold' the poop with our sphincters)

    It's misleading when you said "we need carbohydrates to live." Yes, but we do not need to EAT carbohydrates to live. Our body is perfectly capable of manufacturing them from fat.

      Regardless of where he works, he's got a point.
      Although it would depend on how is your metabolism, how fat you are and what you intend to do - lose fat, gain muscle, train endurance, maintain weight.....
      The fatter you are, the more insulin resistant you are, therefore you should avoid carbs as much as possible, except for those foods high in nutrients which also happen to have a few carbs in them - in essence, avoid "empty carbs" at all cost. Also, avoid sugars and other high-glycemic index carbs.
      If you're thin and want to put on some weight, you should eat plenty of carbs, although you should still avoid sugars and other high-glycemic index carbs, except after waking up and after heavy exercise (the times in which eating sugars won't cause an insulin spike, because your muscles are craving for glucose).
      So, in essence, most people should reduce carbs, as long as they don't get into crazy diets based on meat and animal fat alone.

    I eat so much bread I could consider as a Peasant, I started training my body to be able to reach military standards and loose 40 pound which put me a bit on the over weight side.
    Im Glad to report that with all the Bread eating, Pasta eating etc.. I lost my 40 pounds goal in 3 months and I can Theoretically complete the physical test at the end of basic training for the Canadian army

    We need carbohydrates to live? That is just misinformation, not to mention the fact for millions of years we survived on low carbohydrate diets. Our body is able to produce glucose via gluconeogenesis, and we can also create ketones to fuel our brain and hearts. While im not saying carbs are bad for you i am saying modern day diet is way too rich in carbs, and too low in fat.

      Uh yes we do. Carbs, Lipids, Proteins, and Water are the four things we need the most in our diet, Carbs being the second most important of those as that is our energy source.

      Xevious 1 Actually carbs are not an essential nutrient, our bodies are able to provide all the glucose we need from fat, and proteins via gluconeogenesis. Have u ever heard of a ketogenic diet, it is very low in carbs 20 grams a day or less. Your brain does not need carbohydrates, infact its preferred fuel is ketones which are created from fat. When you give your body carbs it triggers an insulin response, insulin is a fat storage hormone. Carbohydrates might be a fast source of energy for the body but fat is a much healthier source for fuel. You body will burn the carbs for fuel first however that does not mean the bodies preferred source of energy is carbohydrates, it is in fact fat. The current world wide obesity epidemic to due to overconsumption of carbohydrates.

      The *biggest* reasons are because no one exercises and no one eats halfway decent food, namely out of sheer stupidity, but also laziness. I mean, you can blame the non-essential nutrients but that's the same as blaming the gun in a murder.

      zanierrules Maybe it is a bit more complicated than that. Carbohydrates dont properly satiate us so people will eat until their stomachs are full to turn off the hunger signal in the brain. Fat however will send a chemical message to the brain which will satiate us while eating a much smaller volume of food. Maybe the reason we are lazy is because people are eating poorly and do not have energy, and are not hormonally balanced.

      Problem is that most people would never sit through an entire detailed lecture that goes beyond 4 minutes. And it's doubtful that the average idiot will understand anything after that.
      The bottom line is the most important part. Which should be short and bring the point across.
      If you want proper learning than you should get yourself an actual scientific textbook. Or watch a video of a university lecture. RUclips is not a science classroom.

      The problem is you learn fairly little from this because it's gets too technical way too fast and he speaks way too fast. I'm all for being thorough, but he has to work within the limitations of the medium. Only explain as much you can in a 5 or 10 minute video, don't try to cram in more because you want to give a thorough explanation, he should leave that for another video which he can link to. The point is to make it accessible to the average person, not to shove a degree course into a 15 minute vid.

      I don't know about ya all, but I use this type of show as a refresher for material I used to know in quite a bit more depth something like 30 years ago, but have had little chance to discus or use in the interim, so, alas, what imperfect understanding I used to have has mostly faded into the background. Quick, smart and informative shows like these are great for dusting off the cobwebs.

    Lot's of misinformation in this one. Humans have zero need for dietary carbohydrates. Most of our tissue is happy to burn fatty acids, even the brain. And the small amount of glucose that actually IS needed can be easily made by your body from fat by a process called gluconeogenesis. Also, you can get all the fiber you need from leafy vegetables that have very low carbohydrate levels. So, again, no need for dietary carbs. Now you may like the taste of bread and sugar and other carbohydrates, and that's fine, but don't buy into the idea that you need carbohydrates for good health. You don't.

    Um. Wow. Four minutes and thirty seconds and the most they discussed about the negative effects of too many carbohydrates is single sentence at the end. Considering the rising rates of diabetes in the United States you would think that there would be more than that one sentence.

    I may have lost weight on a low-carb diet, but I wasn't enjoying it.

    I think it is refined carbohydrates that do the damage - sugar in everything that do the following (suprised this was missed out of the talk):
    High glycemic load induces high insulin that stores the blood glucose and paradoxically leaves one hypoglycemic, not-full and ready to eat more.
    Non-carb diets are more for rapid weight loss, hard to maintain as lots of traditional foodstuffs are carbohydrate based. Thankfully the British staple, the full English breakfast, can be modified slightly to be low-carbohydrate, high protien and high fat - leaving you full well past lunch.
    I am out in the USA and had a stack of pancakes (heavy refined carbohydrates) with maple syrup - obviously this is unhealthy but I had 1500 calories from that and felt hungry within 2 hours. The same calories in a fatty full English leave you full for half a day.
    Additionally, net-carbs (carbohydrate minus fibre) is what most dieters use these days, no need to stick up for fibre, no-one is saying you dont need it.
    Hope Sci Show goes more into the science next time.
