It's called light sponge cake. without butter or oil. Does not need baking powder because of the fluffy mixed eggwhites with sugar. Be careful when mixing. The whisks need to be very clean and dry. Greetings!

Tried this cake today with clementines, it came out dense, dry and not soft. I will stay with my other Apron favourite recipes 🎉
I think the texture might be like this coz oil is not added in the recipe.
