    I was introduced to COCO MANGOES or PICKLED MANGOES for years of stay in Saipan, Commonwealth of Mariana Islands, a US territory off the Pacific as OFW with my husband (also an OFW) and two children. Life was so simple there and food was abundant! The Chamorros are friendly people.
    As a tropical island, they grow their own fruits and vegetables. These are also found in the Philippines. In the Philippines we eat our mangoes with salted shrimp fry. But over, there mangoes are pickled or “coco”. The taste is sour, salty and spicy. We loved the taste.
    The video will show you how COCO MANGOES or PICKLED MANGOES ARE MADE. This can be served as a snack or a side dish to complement mostly fried dishes or any dish as you wish.
    The mangoes used are ripe but firm. But green mangoes can be used as well. The taste of both is very delicious! The only difference is this. The green mangoes are crispier than the yellow.
    As a BONUS, I used apples instead of mangoes. It is also delicious. Perhaps pear can also work as well.

    COCO MANGOES (PICKLED MANGOES)
    Ingredients:
    2-4 large mangoes, unripe (green) or ripe but firm (yellow),
    Cut in thick strips
    1 C vinegar
    1 C water
    1 t salt
    ½- 1 head garlic, minced
    3-5 pcs. hot chili peppers, thinly sliced
    BONUS:
    4-5 pcs. medium apples, cut in thick strips
    Same marinade used for COCO MANGOES
