Couple of things I do differently which I think makes a big difference: skewer the chicken after marinading and baste the chicken every few minutes whilst in the oven with melted ghee
Obviously less healthy but the chicken is so juicy

Totally agree. Skewered chicken, especially over hot coal makes a huge difference.
