Instant Jilapi / Jalebi Recipe

Here is what you'll need!
Ingredients:
Jilapi Batter
1 cup all-purpose flour
¾ cup water
¼ cup plain yogurt
¼ tsp baking soda
Jilapi Syrup
2 cup sugar
1 cup water
3 cardamom
¼ tsp lime juice
Instructions:
1. Mix flour, water, plain yogurt, and baking soda then allow to rest for 15 minutes
2. Make sure the batter set aside is thick consistency to prevent any dispersion in oil while making jilapi shape
3. Prepare syrup with sugar, water, cardamom and lime juice in a pot on medium heat
4. Remove from heat once the syrup is stringy consistency
5. Transfer the batter into a squeeze bottle then create your jilapi shape using spiral motion in oil that’s on low heat to hold its shape
6. Once all the jilapi has been placed in oil, crank up the heat to medium-high to fry until light golden brown
7. Coat the jilapi in the syrup then transfer onto a cooling rack
8. Ready to Enjoy!

What is plain flour it is maida or wheat flour

I have a question, today i have tried to make jilapi by following your system but after frying those jilapis when i dipped them into sugar syrup and pull them off after sometime Jilapis became soft not crispy :( why did this occur, can u plz give me any solution???

Sabiha Faiz hello, yes the jilapis were crunchy after frying and to make the sugar syrup i tried to maintain the instructions and it was warm. I really can’t find out my mistakes :( :( :(

I don’t have the yogurt during this lockdown. I have besan, cornflour and yeast. Can I use any of these instead of the yogurt?

I’m using another recipe right now with 1:1 proportions of besan & rice flour. You can also use all purpose flour too.

@bangla rannaghor .. the jalebi's turn out soggy and flat even though i have been following the same measurement and technique.. any advice ??
Sometimes it has to do with the temperature of the oil. Maybe it's not hot enough.

Yes, you can. With lemon add 2 teaspoons of Gram flour/besan. Also replace baking soda with 1 teaspoon of active dry yeast.
