Prepare a tomato. Peel, cut in half, then remove the stalk. Chop into smaller pieces then set aside. 6. Prepare a piece of green and red bell peppers. Chop into smaller pieces then set aside. 7. Chop a piece of scallion into quarters, then into smaller pieces. Set aside. 8. Prepare a piece of ginger, three cloves of garlic, then mince. Set aside together with the scallions. 9. Prepare the sauce. In a bowl, combine two teaspoons of light soy sauce, a teaspoon of balsamic vinegar, a teaspoon of oyster sauce, a teaspoon of salt, a teaspoon of sugar, a teaspoon of chicken bouillon powder, a tablespoon of cornstarch. Fill half of the bowl with water, then mix everything together. 10. Drain and squeeze off the excess water from the eggplants, then set aside. 11. Prepare an egg. Beat then pour over the chopped eggplant. Mix with chopsticks then add the right amount of cornstarch. Mix again. 12. Put some oil in a pan. Then heat over high flame, making sure that it bubbles when you put a pair of chopsticks in the middle. 13. Add in the eggplant pieces one by one, then switch to medium heat. Use the chopsticks to flip the eggplant pieces over. Fry until golden. 14. Take out the fried eggplant pieces then drain any excess oil. 15. Switch to high heat then fry the eggplant pieces again for at least 20 seconds. Then take out and drain any excess oil 16. Saute the scallions, ginger and garlic. Add the red and green peppers, then the tomatoes, then the sauce. 17. Cook on high heat until the sauce thickens. Then add in the fried eggplant slices. Mix everything together. 18. Transfer to a serving plate. Top with sesame seeds, then serve.
