I made this for a dinner date last night. Its always risky to try a new dish on a date, but we both loved it. I streamed some African music I found on YT to set the mood. Grains of Paradise were not to be found locally, so since it has a citrus finish, I substituted lemon pepper. I thought it could be too hot after trying the Yajin Kuli, but It was perfect. A little sauce goes a long way. Topping with diced tomatoes worked well too.
One of the things I really like about this channel is the honesty and of course the food. My grains of paradise just came in yesterday, karma must really want me to makes this receipt this weekend.
Wow!! And, to think this is some street food! Well, in all reality, most street foods in other countries are in the purest forms! I can’t wait to make this! BTW, I’ll be making a slight modification to this recipe instead of using PB powder (which I don’t have and may not use it for others) because the modified version reminds me of another recipe. This reminds me of mishaki from Kenya. It's my brothers favourite dish when holidaying in East Africa. I'm gonna order the grains of paradise and see if I can emulate your delicious recipe. The pickled onions is definitely👌 We'll probably add pickled red cabbage too. Thank you💟

4:13 optionally, you could "dry fry" or toast your whole spices in a pan under heat for a few seconds before grinding. It will really release the aromatics in the spices! (I think Steve said this in a previous video, Steve gets the credit for this!)
The peanut is VERY subtle. The great thing about this spice blend is it's hard to pick out the specific flavors of any individuals spice. They just create a mural of flavor.

He put it in his apple pie. =) While I’m too lazy to tackle cutting up the meat, I WILL grind my own spices. I think I’ll try it as a rub for air fried meats, and/or with ground meat more like kafta. Hey Steve, second time making this. My question is this, I sliced up the flank steak and put the rub on and now schedule won't permit me to cooking it. You think it will hurt keeping in refrigerator for what will be about three days. Thanks!
So grilled them yesterday and that amounted to just over two days marinating. The only significant change was the cayenne was a bit more pronounced. All in all was still happy with results. Wish I could post a picture
Flank steak might also be known as beef skirt in some areas. Peanut butter powder is not something I’ve ever seen in the UK, let alone grains of paradise. Not saying it’s unobtainium, but it’s definitely highly specialised stuff here.
I just heard of grains of paradise for the first about a week ago (its in one of my supplements) and here you are using it.... thats cool lol Yea I think this will be getting made as fast as I can order it and have it shipped Update: Ugh its out of stock 😢
To my palate, sumac tastes closer to paprika. The grains of paradise are more like black pepper, but not as sharp tasting. Like I said, there are floral and citrus notes to grains of paradise.

Could you use this rub on a steak or a chicken thigh and then cook on the BBQ and serve with the sauce. I realize that would not be authentic, but it sounds like it would be good that way.

Sounds like another innovative use of a 'waste stream' like almond and coconut flours: first press the oil out then grind the residue and hike the price instead of feeding it to cattle.
Pre-keto, I would make my own peanut butter powder with tapioca starch. Basically, you can add it to any fat and turn it into a powder (olive oil, bacon drippings, you name it). It was fun for doing modernist cuisine "deconstructed" appetizers. I'd make PB&J "shooters" with peanut butter powder (when made with tapioca starch, it turns back into peanut butter with the warmth and moisture of your mouth), I use spherification to make concord grape "caviar", and then I'd have little circles of toast. You'd do the shot and the jelly spheres would pop and the peanut butter powder would melt and it was like eating a peanut butter and jelly sandwich.

I'd be mildly concerned about having salt on it for that long, as it might start to denature the protein.
