Mullet roe season is very short, about 2 months The farm will split the mature mullet into fish body/maw/roe, the most valuable roe will be handed over to specialpersonnel to make, and the rest will be sold to restaurants and markets for human consumption

Me and a good friend of mine were fishing in Port Orange, Florida one day on the Halifax River by the Dunnlawton Bridge, west side on Penninsula drive. When the river came alive.!!!!!!!!! I've never seen so many fish. Millions of mullet about 2 to 3 foot long and ALL FULL OF THIS ROE, EGGS. He was throwing the cast net, I was driving his truck up and down the sea wall hand picking the fish up and loading them in the back of the truck. We literally filled it up !!!!!!!!!! We processed fish for over 4 hrs. We had bait for years after that. The eggs, we put into ziploc bags and froze. Of course we fried some. It was very memorable.
