How to: Holding the Big Green Egg at low temps (EASY!)

  • Holding ceramic cookers like Big Green Egg (BGE), Kamado Joe, etc at really low temperatures is not easy. If you go over the desired temp, it's hard to bring it back down. In this video, I show you how to achieve that "low and slow" mark!

    I struggled getting the BGE to hold at low temps. It would always get too hot and that was no good. I finally found the trick - start a small fire only in one place. This video shows what I do. Enjoy - let me know your tricks as I'm always learning.

    Great video. Good trick on the fire starter in the center. I have some briskets I want to keep smoking for like 10 hours but all my coals burn out. Have you ever kept yours going for more than 6 hours? Adding more coal mid-smoke is a pain

      Do you end up with coal that didn’t burn or does it just use up all the coal? If it just uses it up, this trick should work by just adding more coal at the start.

      The green egg is horrible for briskets in my opinion. I’ve made more than 20 on mine and have never been happy or had the results of a true offset heavy duty pit.

      @@butchertx1927 I recently bought a Traeger and I’ve cooked two briskets that turned out incredibly good without all the fiddling. I used them to create Birria tacos (so just buy the flat). There’s another RUclips channel called heygrillhey.com that has an awesome recipe. We’ve made them for a crowd twice and everyone raves about them.
