As always, the sparring doesn't try to make a real attack. So the instructor here is teaching a technique against a situation without the power and the quickness of a real machete attack. I am not saying the techniques are not good but here there are not being real-life applied
Nice of the guy assaulting him to act like those stubby short-range little strikes would have an effect on him. Not like he could really give his partner real strikes I guess, I just hope he didn't develop a habit of throwing his strikes that short and weak all the time just so he could look fast.

I think that the very first thing is break that arm or try and get the tool out of his hand. Knee and punch while there still armed is risking to much
The idea is to stop the first strike while you counterattack at the same time, he is trying to knock the attacker out at with a smaller amount of time
Thats why you run krav maga is made for your last choice like being pinned or out number
