Sometimes I don't feel like watching but I always like and save for later Chef John's recipes. This man has saved me from starvation and resignation to bland food so many times I'll be eternally grateful.
Egg yolks have an enzyme that ripens bananas so if your bananas are underripe you can mash them with one of the yolks from the eggs and let sit for 30 minutes before using. Just add the leftover whites with the remaining egg.
My grandmother would add peanut butter to her chocolate chip cookies and it wasn't enough to taste like peanut butter but it was enough to change the cookie to something special. It just gave it that little extra depth that kept you coming back for another one. I dont know the amount so you'll have to play around with it to figure out what works i usually add maybe a couple tablespoons to mine but i also love peanut butter cookies so most of the time ill add more! But hers always came out perfect
Save freckled bananas until ready to use by peeling and freezing them. They might "bleed" sugary juice when defrosted, but no worry. Just use entire fruit with the juice.

Perfect Mother’s Day weekend activity as I’m sure every mom has ripe bananas, peanut butter and dry goods on hand! My toddler and I made these during baby’s morning nap, and they were a bit hit! He licked the icing off 4 and ate the chocolate chips out of one, so I’d say they were a success!
I have peanut butter which needs to be finished soon, and bananas going brown, and a rainy weather that matches warm muffins with tea... guess this recipe came at a perfect time ❤ Edit: Came back to say the recipe is very delicious, so fluffy and not very banana-y or sweet. I changed half of the flour for oat flour for a little more fiber. Also, don't skip the chocolate chips! They make all the difference.

My icing didn't come out as thick and was more like a glossy coating which I added twice once the first coating dried. I also got 18 muffins out of this recipe even though my pan looked about the same as his muffin pan. Not a bad thing....just noting my experience. Lastly, a small sprinkle of bacon bits might be good too or some crushed walnuts on top of icing....many options for sure. It's a keeper!

There are a lot of peanut butter brands, textures, and such out there. So might get a small notebook for this one to record all the differing results and which ones need differing amounts of sugar.

If the stick of butter isn’t marked with lines showing tablespoon portions, try softening the butter just enough to scoop out a tablespoon from the stick. Don’t forget to level off the scoop.

My grocery store has a ugly/too small/almost bad discount self in the produce section. They frequently have ready-to-go bananas. No waiting required and they are half the price. Banana bread days are good days.
I made them. They're excellant. But my tasters ( co-workers ) used the term cupcake. Led me to look it up. Cupcakes have frosting, not so much with muffins!! I'm still confused. Love your food. These will be made again!!! 🤔👏
You want over ripe bananas go to your local gas station, I have never got fruit at a gas station but the bananas are always over ripe but your gonna pay a buck or two for each. Got to make these! Thanks John

I’ve substituted puréed baby food bananas, in recipes, when very ripe bananas were not available and I couldn’t wait. It works perfectly.
