- Cucur badak, salah satu kuih tradisional yang popular kerana rasanya yang sedap dengan inti serunding kelapa yang pedas manis. Cucur badak menggunakan keledek untuk bahagian dohnya, kali ini saya menggunakan keledek oren kerana lebih mudah dan tak perlu buang serat pada keledek. Dalam video saya kongsikan cara saya frozenkan kuih cucur badak. Bolehlah buat banyak sekaligus dan frozenkan, bila nak goreng, keluarkan dari freezer 15 minit sebelum digoreng dan goreng dengan api sederhana ke sederhana rendah supaya bahagian dalam masak sempurna.

Jumlah Kuih : anggaran 31 keping
INTI :
3 ke 4 ulas bawang merah
3 ulas bawang putih
1/2 biji bawang besar
3 ke 4 batang serai saiz kecil (hiris nipis)
1 sudu besar biji ketumbar (sangai atau rendam sebentar)
1/2 sudu besar jintan manis (sangai atau rendam sebentar)
2 sudu besar udang kering (rendam sehingga lembut)
Air untuk mengisar
Anggaran 1/4 cawan minyak masak
3 ke 4 sudu besar pes cili kering
1 sudu teh serbuk kunyit
1 ketul kecil gula melaka
Sedikit air
1/2 sudu besar serbuk ikan bilis (pilihan)
200 gm kelapa parut (2 cawan padat)
Gula secukupnya
Garam secukupnya
DOH KUIH :
850 ke 890 gm keledek oren (tanpa kulit) | Anggaran 3 biji keledek saiz sederhana (rebus bersama sedikit garam sehingga empuk & sejukkan)
1 ke 2 sudu teh garam
15 gm tepung beras | 2 sudu besar
190 gm ke 210 gm tepung gandum | 1 & 1/2 cawan ke 1 & 2/3 cawan)
15 gm marjerin | 1 sudu besar
3 gm baking powder | 1 sudu teh

Cucur badak, a popular Malay traditional kuih with sweet and spicy coconut filling. The dough is made from flour and sweet potato. I used orange sweet potatoes in this recipe as it has no large veins as the regular sweet potato does. I will share my way on how to make frozen cucur badak. You can make in large quantities and keep it frozen for up to 2 months. Remove frozen cucur badak and leave it on the counter for 15 minutes before frying on medium to medium low heat, to ensure the inside is cooked properly.

Yields : 31 pcs
FILLING :
3 to 4 shallots
3 cloves of garlic
1/2 onion
3 to 4 small lemongrass (slice thinly)
1 tbsp coriander seeds (dry fried or soaked for a few minutes)
1/2 tbsp fennel seeds (dry fried or soaked for a few minutes)
2 tbsp dried shrimps (soaked till soft)
Water for blending
About 1/4 cup cooking oil
3 to 4 tbsp dried chili paste
1 tsp turmeric powder
1 small block palm sugar
Water as required
1/2 tbsp anchovies powder (optional)
200 gm grated coconut (2 cups packed)
Sugar as required
Salt to taste
DOUGH :
850 ke 890 gm orange sweet potatoes (without skin) | About 3 medium size (boiled with salt until soft, cooled)
1 to 2 tsp salt
15 gm rice flour | 2 tbsp
3 gm baking powder | 1 tsp
190 gm to 210 gm all purpose flour | 1 & 1/2 cups to 1 & 2/3 cups
15 gm margarine | 1 tbsp

Goreng separuh masak atau boleh juga frozen mentah2, tapi perlu letak plastik untuk pisahkan setiap lapisan agar tidak melekat.selamat mencuba
