  • The rafter tables on a framing square are, for the most part, fairly straightforward provided the foundational understating is there (I' do a longer video in more detail). The "side cut" portion of the table can confuse even a seasoned carpenter. This is but a quick explanation of what those values are used for. Drop any questions below.

You take the side cut measurement off of the tongue not the blade, you set the tongue to 12 inches, and the blade to whatever the value is on the table, then you mark the angle that is on the tongue, the plan always shows 45 degrees because it is a one dimensional drawing.

I did a blisteringly accurate 3D model, creating a jack rafter in the context of a roof because I didn't quite understand this concept, but I get it now.
I'm not correcting you because what you've said is correct. But, I will make some clarifications.
If you check the cut angle against the broad side of the board, it would be 45⁰. But checking the cut to the narrow side is different because the cut is not perpendicular to the board's narrow surface.
I believe the purpose of this information on the framing square, is strictly for setting up your saw, when making a compound miter cut.
Also, as you have shown, making this cut with a hand saw, makes this information unnecessary for the operation. It's just for making the two cuts all at once with a compound miter saw. That's the only info missing from your video.
Interesting, except for your video, I can't find anything else covering this topic on RUclips. Thanks for putting it out there!
