They were following you through your crew. They'll search for your crew name on Rockstar Social club, go through the members to find someone with a linked PSN/Gamertag/Steam account, then add them as a friend in game. Then they can go to start menu -> crews -> friend's crews and see everyone in your crew that's online and join any of their sessions at will. Works even if you've blocked them or are appearing offline. Only way to prevent it is to not be in a crew or be in a crew by yourself so you know when someone tries to add you. It's been a known issue for years that allows session stalking and R* refuses to fix.
