Hi Dominic! Thank you for your question. This technique will work for all chocolates but it would be better for milk and dark chocolates to raise the temperature to 16°C and lower the speed to 15-20 RPMs. Also, you might be interested in a course on dragees in one of our Chocolate Academy centers worldwide - check our course calendar on www.chocolate-academy.com - we're looking forward meeting you there! Best regards

The Savour Pastry school in Melbourne have 2.5kg and 10kg bags that they ship to NZ. The 2.5kg bag is about 70$nzd. Ruby won’t be available to buy here until next year at the earliest
Hi There! Thanks for the interest in Callebaut chocolates! :-) Yes it is available in New Zealand. We distribute through Reso and you can place your order online right here: www.reso.co.nz/. Hope this helps - in case of additional questions, don't hesitate to get back to us! Best regards!
Hi @ThreechTHEdruid, glad you like it! :-) Yes indeed, Callebaut ruby chocolate is now available at artisan chocolatiers throughout Belgium. But sales are going fast, so make sure to get yours soon! :-))
Hi Adrian! We're launching in a phased manner. We first opened up chocolate availability in Belgium, and gradually we are expanding to other countries, in all corners of the world. Today it's still unclear when exactly in which country, but expected is that within 6 months from here Callebaut ruby chocolate is available for/at artisan chocolate professionals in Latin Marica too! Hope this helps! Best regards!
2:10 How useful is 34 %? It means nothing! Moments ago you said various versions of panning machine exist, so you should know that. Could you please specify the speed in a correct manner? Like rotations per minute
unfortunately he speaks so fast und unclear. Very hard to understand. As representative for many countries i would expect a little more clear pronounciation
i clean the chocolate with heat gun blower while it is still rolling inside without removing the dragee
I wasn't looking for this. I was looking got actual rubies. But I liked the vid!
Does chocolate need to be kept in temper when using it for panning?
Wow, lovely
beautiful
I would like to do a full course of dragee, any advise where to do?
I love 😍 ruby choco. Callebaut 💞
❤️❤️❤️
I wonder if this can be done with Omisav’s paste, I hope I got the spelling right?
Appétissant mais compliqué. Tous le monde ne dispose pas de matériel professionnel pour réaliser cette recette

RPM wont help you as the size of the drum will determine how far the inclusions travel for each RPM
Could you just repeat what dry fruit is this?
Physalis, also known as gooseberries.
