True story, I grew up in South Georgia, my grandmother made neckbone and rice. My favorite dish of all time. I went off to college at the University of alabama and when I would come home, she would always cook neck bone and rice. Well my country tail married a gal from the city and we now live in the Birmingham area. She never ate country cooking like I grew up on. She will shop at Publix and buy all that expensive meat....I go to a grocery store on the west side of town where the soul food cooks live. I look out of place in there I know but I smile when they stare and keep going. I brought home some neck bone. Cleaned them( but I learned from you today it's easier to clean them after they have been parboiled) cooked em till they were tender with red pepper and chicken cubes, that's what grandmother called them. My wife came home said oh wow something smells good what is it I said pork chops and rice. She ate so much she got sick.ive never told her it was neck bone, she loves her pork chops and rice now. This brings back alot of memories, grandmother passed in 2014 at 97 I miss her and her country cooking. She made a killer pot roast too! She could stick her finger in the water and it would taste good

Jason King First, Your Grandmother was Blessed with a long life. My condolences to you. I know she was a good cook. A lot of good cooks in Georgia. I know you miss it because every once in a while you will crave what you grew up on. I do. No comment, on the love ❤️ of your life. However, when you got to the pork chop part I could not stop laughing. That was sooooooo funny. Every time I think about it I bet I am going to laugh. I have done similar things back in the day. Especially when people would say I don't eat that. Then I cook it and sit in the corner watching them eating it. Just laughing on the inside. 😂😂😂. You made my day!!!😃

Jason King I'm from Augusta and my Aunt makes the best neck bones and rice. Not the way Ms. Chris made... with a think delicious gravy (smothered) which covered the rice. I live in California now and when I go home that's the FIRST thing I ask for...
Jason... you said they look at you funny when you go to a certain store, why is that... I'm curious? 😊

Joytv so the stores around the house don't carry neck bone, back bone ox tail etc. I'm the only white guy in the stores that do the shoppers in there are like " da hell he doing in here"!!

      Jason, my condolences to you.
I love the port chop part of this story. I remember when I was with my daughter's father. He made it clear that he did not eat pork. One day, I baked some pork chops and made some rice and gave it to him. He swore it was steak. I cracked up laughing. I told him later that it was pork and I don't know if he was hungry or what but he tore it up. He still stuck to him not eating pork but he would eat that every now and then. I actually love neckbones and rice cooked together but I am scared to try it because I don't know the rice ratio for after the neckbones cook. Maybe Ms. Chris can share some information with me.

chriscook4u2 so glad you took the time to reply. My grandmother did live a long life and a very blessed life. She will be missed, but no one can take away the memories! I 42 and I find it funny how people won't eat meat with a bone. My wife is not quiet that bad (yet) she has ate neckbone which she thought was pork chops, chitterlings which was fried and she thought was bacon, and mountain oysters she thought was steak. After 14 years of marriage I can assure you if she found out she would be at the lawyer's office TODAY! I will try most anything once. My mother use to say my dad would eat a turd of it smelled good. Guess I'm alot like him

    Hi, Chris,
I just found and subscribed to your channel yesterday. I saw your video on how to prepare the neck bones and was blown away! I don't know of anyone who goes to such lengths to clean their meat. And until I watched your video, I never realized how badly neck bones need to be cleaned the way you clean them! lol.
I prepared your Neck Bones, Green Beans and Potatoes today, following each step of your recipe. (I did use fresh green beans and baby new potatoes.) Let me tell you, I've never had a better meal of this type. Everything was perfectly seasoned and cooked to tender, juicy perfection. (The neck bones ended up having a taste and texture very close to that of cottage ham - what a miracle!) My husband, who normally won't eat neck bones, so I've only fixed them once in the 42 years we've been married, ended up eating a platter full and spent the entire meal complimenting me on what a terrific job I did. When our three grade school age kids smelled everything cooking and asked what we were having for dinner I was afraid to tell them what it was so I just said pork and green beans. They tasted it and loved it and kept badgering me about what type of pork the meat was. I finally told them, but it didn't phase them a bit and they continued gulping it down without a pause.
You are truly a gem! I can't wait to start going through all of your recipes and techniques! I'm sure there are going to be a lot of happy campers here! Thank you so much!

One of my favorites one pot dishes! I love to add in any one of the "cream of mushroom, chicken or celery" soups. It just adds a creaminess & flavor to that pot liquor down in that pot.

I love how you take the time to show us how to do the prep work, especially cleaning, before cooking. I knew nothing about 'soul food' cooking until I worked with a great bunch of young black women. The first thing I tasted were greens and I fell in love instantly! We shared a wonderful relationship, got together once a month, either to go out dancing or to each other's homes for small get togethers or huge parties. And the food was a bonus! I enjoyed everything that was made, mostly all southern cooking. I've since retired and moved clear across country. So now with time on my hands, I am trying to recreate some of those delicious flavors that I've been missing. you are my number 1 teacher because of the way you cook and explain all the details that are very important in making a good, healthy dish. There are many good black in-home chefs on RUclips but you not only show us the recipe but you always explain 'why' to do something like how important it is to wash your greens thoroughly and just like in this show you explained how to clean the neck bones so well before cooking. I'm so happy to have found you on RUclips, you really are one in a million! Thank you for your great recipes, I have a lot of catching up to do. God Bless.

Girl, You are just Awesome. I am new to your channel and I have spent much of my Saturday watching you cook. I am going to try the pot roast for my Sunday dinner tomorrow, which will also serves as my husbands birthday dinner. I will let you know if I made you proud. Thanks.
