A quick contribution: you can make those joints using super glue (loctite) and card shims, with two benefits: the super glue hardens the paper and the shim allow a sleeker profile on joints like these.

okay well in that case I make evertthing in a 1/8 scale. So i find the official height and divide it by 8. So spider-man is 178cm therefore my model is 22.3cm. Doomfist is 218cm so my model is 27.2cm etc. And every drawing I do is to this scale as well. If you have any questions about specific measurements of something feel free to ask!

More or less. what you do is; instead of attatching the pivot to a tube of paper for the lever, you attach the pivot of one joint to the pivot of another joint. the same way by wrapping the two pivots with card and filling the gaps with glue. It's not as strong though so I only use it for the neck
There are other brands of double-sided tape. I'm currently trying to make one (A chibi Kamen Rider OOO) and I use Paramount Tape brand, coz' that's the only brand I can get ahold of here in my area
then your shoulder, knee or whatever might be a bit bigger, no big deal. just make sure there's enough of a gap between the pivot so the pivot doesn't actually get glued
