My favorite catfish recipe is gutted, head off, skin-on, pan fried in butter with Lawry's seasoning salt. Simple, but tasty.
Try a whole fish deep fried. They are awesome. I don't do fish soup.
@@edwardarsiaga3569 Never been a big fan of fish soup, either. I'll eat it in a survival situation, as it is the best way to get the most nutrition from your fish, but that doesn't mean I'd enjoy it that way.
I got barbed by a catfish once. My finger burned and itched for days! That soup looks good! Nice video as always.
That backdrop is majestic! Cooking in the desert while literally cooking (yourself) in the desert! Hot soup on a hot day. Sounds about right to the Asian in me. Cheers fellas be well! Blackened Catfish or a battered fried catfish would probably be my go to.

My favorite catfish bait is Shrimp. I buy it frozen in the supermarket, then thaw out a few for bait at a time. Deep fried catfish is my favorite. I soak the cats in water with a half cup of vinegar for an hour to get the slime off, then fillet them, and soak the fillets in Buttermilk and hot sauce overnight. The next day roll them in flour and Cornmeal seasoned with Cajun seasoning and deep fry in oil.
You've been overdue for some cold rainstorms and we've been overdue for some serious camp cooking. Love it!

I had one bop me when I was a kid, it's crazy painful. Also another thing that people don't consider that I have for prepping is making sealed seasoning. That way you can season your food in a bad situation.
My favorite "catfish recipe" is the good ol' "fried catfish" (don't forget to eat the crispy tail!) Take the head and skin off, then rub in some flour, add some seasoning and fry it in the pan with some butter.
My grandparents were "commercial fisherman" and we ate a lot of those catfish back in the days. I remember my grandmother cooking some creamy fish soup/stew/chowder (celery, carrots, corn, potatoes, seasoning) but my favorite was the "fish omelette" (usually from perch/bluegill, bass, walleye) with a little mix of cheese and mushrooms

For us, the easiest way to prepare the catfish was:
Hold it with upside down with your thumb under the mouth the head facing you.
Cut on each side behing the barbs, then put your knife flat near the belly throught the cuts and glide it toward the tails to "open it" and remove all guts with the knife
Then use the back of your knife to break the spine behind the head and pull the spine off with your knife or hands while holding the head with your other hand.
Then you are ready to fry it or you can make fillets with the bigger ones.
Holding the head with your thumbs prevent a lot of (painful) barb impaling
rub belly slime from catfish on your wounds after being stuck helps take the sting out after couple minutes wash hands the slime has for some reason a way of working.

Thanks for the inspiration - I bought a couple of peppers after watching your videos, and now I will make some sort of soup tomorrow. An old housemate (bbq fanatic from Kentucky) would cook the onions down to a unrecognizable goo and add it to his soup, for extra flavor.

Wow that soup was awesome! Never even thought about fish soup. The only way I’ve ever eaten channel catfish is filleted and fried or fried whole and occasionally bake it and make tacos. It’s all very good. Channel catfish and blue catfish are excellent fish to eat!
I used to set trotlines on the river and creek, and catch lots of channel catfish. I can’t believe I never thought of fish soup!

Nice video! The only thing missing is the hatch green chile in the soup. I'm surprised you didn't add it, especially this time of year when It's in harvest!
For catfish, I like to cut them into catfish fillets. Then pan frying in butter and using Weber N' Orleans Cajun seasoning (your preference on how much seasoning goes on)
Favorite is fried catfish. Those barbs will get you , cut my finger on one years ago , still have the scar . Thanks for taking us along . Stay safe !

I eat soups year round, again because of price, the amount you can make, and a soup is so yummy if done right, easy and cheap, very good for you as well.
Even though you are a cowboy cook, I was glad to see you prepped the vegetables with a different knife than the boot knife you used to cut the worms in half. Used to fish for catfish in one of the stock ponds on my grandparent's farm in Arkansas, we called them "bullheads", sure does sting & ache when they "gore" you.
Man, you gotta skin that catfish the Cajun way. Skin em, de-bone em and make a tomato gravy and you’re in heaven! That poor fish was begging for help🤣🤣
I don't know if I've ever had catfish any way other than fried. I'm not crazy about boiled carrots but I do like them cut into sticks about the size of fat french fries, toss in a little olive oil, just enough for the seasonings to stick to, then sprinkle on some salt, pepper and ground up rosemary, then roast them for 45 minutes to an hour at 400°. Probably a bit difficult to do over a campfire though.😂 Also, look up Chimichurri recipes, I make a delicious carrot green chimichurri. You threw away the celery greens! I just chop those up and add them to the soup, pot roast, whatever I'm putting celery in, though they can be a little bitter if you have too many.
You may not be a carrot eater, as am I, but even 1 carrot added to soups, stews, and baked meals adds flavor. .BTW, my favorite way to enjoy catfish is breaded and fired in an iron skillet.

Amusingly, I am not a catfish fan ... but I did do catfish nuggets and fried Okra a long while back before we left Virginia. Turned out pretty yummy!!
Shrimp Gumbo soup with a tropical twist, adding a little coconut and some pineapple chunks . Its really good.
Well I've certainly eaten my share of catfish back in the day. Breaded and fried was usually our style, but in a wilderness setting, this would not always be convenient. Great video James!

James, carp is an essential ingredient for a Central European style fish soup. All other fishes are optional.

Those damn barbs are hell. They sting like mad. If you ever want to drive an hour more I can show you one of my favorite places. It’s also squirrel season making for a good catch & cook. It’s getting in the 50°s at night too.

Have you made any videos from Hueco Tanks? It was a world class climbers destination a long time ago. Climbers from all over the world would visit El Paso to climb and boulder at Hueco Tanks.
Is Esperanza Reservoir still active in East El Paso off of I-10 near Esperanza? It was more of a watering hole for the ranchers cattle. Your videos bring back great memories.

The Koreans have a nice fish soup. It's called Jjamppong. Easy to find on the internet. Probably a bit spicier than your soup, but quite good. Give it a try if you think it sounds tasty.

Don't make soup with your carp, pressure cook them bones and all, then you can use them like salmon in loafs and burgers and things like that. More nutrition that way.
I fry my cats with panko bread crumbs and butter. I also skin, fillet and behead them. I've been barbed a few times and it really hurts.
