I tried out your recipe! Perfection, soft and so easy. Mandazis were ready in 1 hour. I didn't have the coconut milk, so I added coconut powder for the coconut flavour. I loved it, thank you!!

Thanks too. All those factors play a role. But buttermilk, yoghurt or lemon play the MOST significant role because of they make the dough slightly acidic..hence moisten it. Now,,how that reaction occurs..we might want to look for Mr. Sawenja..to explain further. Ahahaa

Add some lemon juice or vinegar. That helps a lot if eggs are included.

I don't like using self raising flour...but yes, that's an option for some people.
