It looks fantastic and delicious, but calling this "healthy" doesn't really hold up by most standards. You seem to focus heavily on it being low-carb, which, first of all, it isn’t. With ingredients like corn, beans, and sugars, it’s quite high in carbs. But more importantly, why fixate on carbs? If the idea is that fewer carbs mean less weight gain, that’s a misconception. Weight management is about total calorie intake, and with all the cheese, layered tortillas, and sour cream sauce, it’s clear this dish is loaded with calories.

@@papascruffy T*Fal makes a good heavy duty 5 quart pan with lid for 30. It's not exactly what I have but seems comparable. Walmart has it. Good luck!

Looks good except will have to switch out Cilantro for parsley. Just have no tolerance for Cilantro
