I've been getting hell lots of comments like...its a lobster. its a lobster not a crayfish, thats not a crayfish..appreciate ur insight. but in australia, these beuties are called crayfish, or if it suits u ppl better u can call it australian lobster, but since i live in australia, im happy calling it crayfish. - Хобби
The problem is, for americans, crayfish are small lobster-like crustaceans that live in fresh water streams or wetlands. They can easily be distinguished from lobster by their size--they are very small and it takes several pounds to get enough meat to make a meal from them. If you're american and aren't aware of where this video located, you might assume it's some youtube asswipe trying to tell you this is a video of a mammoth sized (american) crayfish.

Good stuff! Only advice I'd give would be to cook the crayfish/lobster/donkey shell side down so the meat basically poaches in its own juices.

I love people like you ..you arent chefs but you try exotic food keep practicing it makes perfect a smal tip when cutting dont cut from down side cut from upside to down it makes it more easyier and it stays firm on the table and cuts nicer :) keep it up
It's called Spiny Lobster mostly caught in Caribbean, California,and Europe. Crayfish are smaller-have claws and they are abundant in Louisiana U.S.A.. Lobster with big claws are from Maine U.S.A. but I get mine in Marthas Vineyard - Lobsterzillas and Kongs.
Boy, if crawfish ever got that big down here in Louisiana, we'd all be on the side of the road fishing them out of the water!!!
YUM! Yes they are crays. In NZ we call them crays as the Aussies do. Nice cooking technic. Will try that. Big ones too, well done.
In Kaikoura for the perfect cold ones---- boiling water, crays in, back too boil, 4 mins per cray in pot, cool under running water, in the chilli-bin (eski for our aussie bros) on ice overnite, yum yum with a dipping bowl of malt vinager.

That crayfish is bigger than some lobsters I've eaten. Reminds me of the Simpsoms episode when Homer ask for a beer, and it's this huge thing. "big enough for you yank?". lol

The meat looked a bit on the clear side. I thought seafood should be cooked until it's no longer clear. Is that right?

This may have all ready been stated, but people are confusing "Crayfish" with "Crawfish" and the regional term for warm water lobster which is Crayfish.
Australian and Caribbean Lobster = Crayfish (big spiny lobster).
Crawfish are much smaller lobster like crustaceans usually used in spicy boils and Cajun cooking.

@Dawgmatic84 chuck em in the freezer for a bit (to put em to sleep) before you cut them up... the tail doesnt really need too much boiling, mainly the top half just to cook all the small areas like the legs... the tail should be seared nearly fresh to retain some flavour.

i've never seen such huge crayfish. I hate eating the small ones , you'd have to eat 1000 of them to feel like your eating something.

Some losers think that all home cookers have to be professionals! Whether they are professionals or amateurs, people cook at home the way they want and they make their food the way they like! At the end we all enjoy whatever we make ourselves because that's how we prefer it!

those are american freshwater crayfish or crawdaddys. Yabbies in aus. These are the salt water spiny/southern rock lobster which are the lower southern hemispheres equivelent to the northern salt water lobster, they do not have the pincers but taste very alike. Nice feed.

Umm... Dunno which part of Australia you're from, but we definitely call them rock lobster here in Sydney mate.
coook the cray fish on the shell,so it wont overcook and would keep all the nice juices in there
That really does look like a variety of spiny lobster. They can be found on both Atlantic and Pacific coasts, and do not have the big claws that one might think of with the typical Maine lobster.
@Dawgmatic84 Crayfish in Australia are fresh water and allot smaller. These are Rock Lobsters most often incorrectly called Lobsters or Crayfish. Have a look for a pdf on sanssoucidolphins . org called: difference between Australian decapod Crustacea (lobster, rock (spiny) lobster, crayfish, bugs and scampi).

You acan also drown them in fresh water before you cook them.. This stops them from throwing their legsand swimmers.
The Rock Lobster meat is very sweet. I love it!

@kaikahitonari Lobster and Crayfish do have claws. These are Rock Lobsters.
I thought you guys were going to eat it right after boiling lol, so glad you finished cooking it on a grill. How much are you paying per lb for the cray fish over there?
thanks mate, was wondering what the best way is to cut them in half, mine are still green (raw) so will do it first.... love how your mate almost lost his finger around 1:57, thats us aussies for you .... though i do hope you boys had beers in your hands too while doing that
We have these here in the states(Fla) . We call them "Spiney Lobsters" no claws.

i live in south georgia and we had alot of rain and you could walk outside and look in the ditch and find about 10-20 pounds of them in 5 minutes.

looks like a Panulirus cygnus or a spiny lobster or it is the other species of crayfish which australia has over 100 species in a dozen genera. go and look it up for yourselves but its probably a spiny lobster if it is over 18 inches long (some of the biggest i have seen but the biggest i ever saw was almost 4 pounds) which is roughly 45 centimeters but there are big ones over there.
If you've ever cooked a lobster or crayfish well any shellfish at that, you'd know that leaving the shell on while cooking is the best way to cook it. If you kill a crayfish by severing it's brain with a good chop with a knife then you get all the juices from it everywhere. If you cook it with the juices in there it makes for a much tastier and tender meat. Clearly these guys know what they are doing, you are the amateur mate.
wow thay crayfish looks like half lobster and half crab...now i want one...
its different in spain we have both ones with claws(called bogavante) and ones without like in this video(called langosta). In the market there is also lobsters imported from california they are cheaper than the national(half price) but they arent so good like national ones. within all of that there are lots of types

Yes in most countries its a lobster and a crayfish is small and lives in the rivers, etc.
In Australia these are called Crayfish i dont know why ask the uploader or something
Crayfish yumm! aka western rock lobster or southern / Tasmanian rock lobster depending on where abouts in Australia you come from.
It's all the same difference just no claws!!

If you caught those urself, you should purge them in boiling salt water because crayfish are known to carry diseases, and when you boil them in salt water it cleans them basically.

as far as i know lobsters have pincer claws..these cute lil ones dun and is dark red in colour as compared to lobsters which are a bit on the darkish blue-purple side...but i dunno..maybe just a different species
