Your meal choices included a variety of vegetables, meats, starches, etc., while avoiding ultra processed foods. I generally prefer fresh fruits and vegetables but frozen are nearly as nutritious and appealing; definitely more affordable on a budget or if shopping bi-weekly or monthly. Love love your channel. We are two seniors (78 & 81) who hike, dance, travel and garden - anything but sit on the sofa; however we live on a very tight budget. I appreciated this video much as it fits more within our budget and gave me great ideas on healthy eating. I had reached the stage of “I don’t want to cook as I’ve been there done that” but you have such easy ideas (one pan meals) it motivates me.Can’t wait to try pumpkin pancakes-yum.
Could you tell me the amount of eggs you mixed with the can of pumpkin to make the pancakes? Did you add anything else? I love your videos bc you don't use processed foods. Thank you for the great ideas!!
Normally, when I make the pancakes I use 1 cup pumpkin with 4 eggs and add about 1 tsp. of cinnamon. Blend them ( or whip them well) that puts air into them and makes them more fluffy. For this video I used the whole can of pumpkin with 9 eggs. I topped them with butter, honey, and cinnamon.
@jessicas.9859 I like them the way I usually make them with the 4 eggs and 1 cup of pumpkin. I think because that is what is familiar to me. Both ways are good though :)
We do eat cheese and bread. I would say that we don't eat a ton of those items though. I prefer to use whole grains. I make a lot of things by grinding oats into flour. It's just cheaper and healthier for us. When I see a package of meat on sale I snag it up quick. haha. I will throw it in my freezer or just make something that night. Other ways I stretch our budget is shopping produce in season. I also have a garden which really helps. I add things to some dishes to stretch it. For example, chop mushrooms really small with my ground beef when i make sloppy joes. (kiddos never know) It just helps bulk it up and hides some veg.
