Simple rice can be daunting let alone Somali rice we saw our parents make which had plenty of steps to them which often put many of us off. I’m a Mexican-American Muslim. This reminds me of Yemeni rice sisters bring to the masjid 😋 which of course I just HAD to learn how to make since it’s so good. Now it’s a pretty regular staple dish at our home. Unfortunately, we don’t have many Somalis in our area, but I do notice Somali & Yemeni cooking have things in common, from the hawaijj spice mix, to the fried onions and food coloring you add to your rice. Hope one day I get to try authentic Somali food 😊

Made this dish so many times, I steam some well-seasoned chicken(salt, garlic powder, paprika, cayenne, cumin powder, ...) a little bit so it releases its juices and I can get a bit of stock then I fry the chicken and use the oil from frying the chicken and the stock to cook the rice. I don't need Maggi after this. Maggi is overprocessed and contains gluten so if you're cooking for someone with food sensitivities this is a great addition. This is a great and easy to remember recipe. Thank you Ilhan!

Rice comes from Asia in general they used food colouring way before rice arrived in our land. The land of spices is India, they cooked raisins before anyone else . So non of it is really ours! We just love it👌 and every nation adds its own touch.👍
al -ad-aniya Just because pink is a shade of red does not mean they are not their individual colours. Might have similar components to both but Somali rice tastes different to our Asian rice and both amazing in their own ways!

Okay so I have cooked this recipe several times, and would like to help others with rice cooking part so their basmati rice can come out fluffy and separated. For a cup of rice soak it for 30 minutes in warm water, then for the actual pot of cooking water pour some oil and squeeze some lemon juice (i did not measure the water, just more than the rice- measurement of the water does not matter and I believe it may not matter for the rice either), then let that pot of water boil to high heat , then put your drained soaked rice in the pot and let that boil on high heat for 4 minutes. After you have boiled the rice on high heat for 4 minutes drain the rice again. Then put the rice back in the pot and let it cook in its own heat for 15 minutes (stove off). While that is doing that you can make the spice mix. And then you can place your rice on top, letting it further cook on the stove until you see fit. Boiling the rice on high heat for precisely 4 minutes with the lemon juice and oil is key! Prior to learning that, I could never get the rice fluffy and separated. I tried cooking it until “translucent”, and “al dente,” but my rice would never be the right texture when I was finished with the whole recipe.
There are so many types of rice it drives me crazy. It would not work for me if you use regular basmati, but it did work for me when I used Sella basmati. I'm glad she mentioned what kind of rice she used, I hate recipes that only say rice when it's some kind of special rice. It does make a difference.

Food coloring is artificial you can put saffron.
