  • Mutton White Biryani Recipe
    #### Ingredients:
    *For Mutton Marination:*
    - 1 kg mutton (preferably with bone)
    - 1 cup yogurt
    - 2 tablespoons ginger-garlic paste
    - 2 green chilies, finely chopped
    - 1 teaspoon garam masala powder
    - 1 teaspoon black pepper powder
    - Salt to taste
    - 1 tablespoon lemon juice
    *For Biryani:*
    - 3 cups basmati rice
    - 4 cups water
    - 3 tablespoons ghee or clarified butter
    - 2 large onions, thinly sliced
    - 2 tablespoons ginger-garlic paste
    - 4-5 green chilies, slit
    - 1 cup fresh coriander leaves, chopped
    - 1 cup fresh mint leaves, chopped
    - 1/2 cup cashew nuts
    - 1/2 cup raisins
    - 1/2 cup fresh cream
    - 1/2 teaspoon saffron strands soaked in 2 tablespoons warm milk (optional)
    - Salt to taste
    *Whole Spices:*
    - 4-5 green cardamoms
    - 4-5 cloves
    - 2-inch cinnamon stick
    - 2 bay leaves
    - 1 star anise
    - 1 black cardamom
    - 1 teaspoon shahi jeera (caraway seeds)
    #### Instructions:
    1. *Marinate the Mutton:*
    - In a large bowl, combine the mutton pieces with yogurt, ginger-garlic paste, green chilies, garam masala powder, black pepper powder, salt, and lemon juice.
    - Mix well to ensure the mutton is evenly coated. Cover and refrigerate for at least 2 hours, preferably overnight.
    2. *Prepare the Rice:*
    - Rinse the basmati rice thoroughly until the water runs clear. Soak the rice in water for 30 minutes, then drain.
    - In a large pot, bring 4 cups of water to a boil. Add salt and the drained rice. Cook the rice until it is 70-80% done (the grains should still be firm). Drain and set aside.
    3. *Cook the Mutton:*
    - In a large, heavy-bottomed pot, heat 2 tablespoons of ghee over medium heat.
    - Add the whole spices (cardamoms, cloves, cinnamon stick, bay leaves, star anise, black cardamom, and shahi jeera) and sauté until fragrant.
    - Add the sliced onions and cook until golden brown.
    - Add the ginger-garlic paste and green chilies, sauté for a few minutes.
    - Add the marinated mutton and cook on high heat for about 10-15 minutes until the mutton changes color.
    - Lower the heat, cover, and cook until the mutton is tender and cooked through, stirring occasionally. This should take about 40-45 minutes. Add a little water if necessary to prevent sticking.
    4. *Layer the Biryani:*
    - Preheat the oven to 180°C (350°F) if using.
    - In a large pot or oven-safe dish, start layering the biryani. Begin with a layer of mutton, followed by a layer of rice.
    - Sprinkle chopped coriander, mint leaves, cashew nuts, and raisins over the rice.
    - Drizzle some fresh cream and a bit of saffron milk if using.
    - Repeat the layers until all the mutton and rice are used up, finishing with a rice layer.
    5. *Dum Cooking (Steaming):*
    - Seal the pot with aluminum foil and cover with a tight-fitting lid. Alternatively, you can seal the edges with a dough made of flour and water.
    - Place the pot in the preheated oven and bake for 25-30 minutes. If cooking on the stovetop, place the pot on a tawa (griddle) and cook on low heat for 25-30 minutes.
    6. *Serve:*
    - Once done, remove from heat and let it rest for 10 minutes.
    - Gently fluff the biryani with a fork.
    - Serve hot with raita, salad, and lemon wedges.
