Recipe
For removing smell
Put cleaned and cutted payas in a pot full of water+Half cup vinegar
+Lehsan adrak ka paste and boil it for 10 to 15minutes then throw it's water
Now masala for paye 3.5kg
1tbsp surkh mirch powder
1teaspoon Darchini powder
1 tesp bharie ilaychie powder
1tesp chotie ilaychie powder
1tesp Lawang powder
2tbsp Garam masala powder
2tbsp Zera powder
1tbsp kalwangi powder
2tbsp ajwain powder
3 kushk dhania powder
Half tbsp kalie mirch powder
2tbsp Peprie powder
Namak
1tbsp Haldi powder
Half teaspoon peprika powder
Mix these masala, put half masala in cooker with 3.5kg paya+half kg pyaz cutted+lehsan and adrak to taste
And enough water to cover all payas. Then cook in cooker for 45 to 60 minute's.
Take 250gram ghee in another pot and cooke the yogurt mixed masala for 5 minutes and then mix it with paya and cook for more 5 minutes.. Garnish to taste.. its ready
