    This is the recipe I'll be trying out, based on the video:
    Shinichi's Mother's Gyoza
    Makes about 30 gyoza
    Ingredients:
    6 chives (sub spring onions)
    6 garlic cloves
    1/4 small head of cabbage
    1/4 lb ground pork
    1 T sesame oil
    30 gyoza wrappers, circle shape (can also use wonton or dumpling wrappers)
    For pot stickers:
    1 T vegetable oil
    1/4 C water
    1 T sesame oil
    For boiled dumplings:
    2 C water
    1 tsp salt
    For the sauce:
    1 T soy sauce
    1 T rice wine vinegar
    1/4 tsp chili oil
    1/8 tsp sesame oil (optional)
    Instructions:
    1) Thinly slice chives (both white and green parts) and put in a large bowl.
    2) Mince garlic and add to large bowl.
    3) Finely chop cabbage and add to large bowl.
    4) Add ground pork to large bowl.
    5) Add sesame oil to large bowl.
    6) Mix all ingredients in bowl together with hands until uniform.
    7) Wet edge of one side of gyoza wrapper with a finger moistened with water.
    8) Spoon about a tablespoon of the meat mixture into the center.
    9) Fold the gyoza in half and press seams together while pleating the side facing you.
    10) Repeat for the rest of the dumplings.
    For pot stickers:
    1) Pour vegetable oil in a non-stick skillet heated over medium heat.
    2) Line the bottom of the pan with the gyoza making sure the pleated side is facing up.
    3) Cover and cook for 2 minutes.
    4) Pour in the water, cover, and cook for 6 minutes over medium heat.
    5) Drizzle sesame oil on top, cover, and cook for another 2 minutes over medium heat.
    6) Put an inverted plate in the pan and carefully flip pan with plate over to remove gyoza.
    7) Tops should be soft (pleated side) while the bottoms browned and crispy (non-pleated side).
    For boiled dumplings:
    1) Bring water to a light boil in a small pot.
    2) Add salt to boiling water, then add dumplings.
    3) Boil dumplings for 3-4 minutes over medium heat.
    4) Remove dumplings with chopsticks onto a plate.
    5) Skins should be translucent, and the filling cooked thoroughly.
    Please let me know if the amounts need to be changed.
    I like how easy her recipe is! I'm looking forward to trying it out!

      Reporting back after making these today with the doubled recipe (can't skip freezing a couple!):
      I used a slightly heaped tablespoon of filling per wrapper but ran out of wrappers and just made mini-meatballs with the remaining filling (I simply put them in the pan with the pot stickers). I ended up with 8 mini-meatballs and 54 gyoza (would be 62 gyoza in total). Ingredients I used:
      - 6 spring onions (medium size)
      - 1 bunch of regular chives (25g/0.9oz)
      - 6 garlic cloves
      - 1/2 head of (red) chinese cabbage (about 300g/10.5oz, forgot to weigh it)
      - 700g/1.5lbs ground meat (pork-beef mix)
      - 2 Tbsp sesame oil
      - Salt + pepper (use more than you usually would!)
      - 2 packages of wrappers
      Tip for thawing the wrappers: Take them out of the package, wrap them in a clean, slightly moist dish towel and set them on the table (on a plate) for 1-1.5 hours. That way they won't dry out and will become soft enough to not rip while folding.

    She is right! "I never get tired of Gyoza." Ever since I started to make Gyoza I'm addicted to them! I am trying to get better at making the Gyoza wrapper though...

    The last time I was in Japan, I took two cooking lessons. In one we made ramen soup and gyoza. They are delicious. How wonderful that you and your mother can do this together!

    I am so excited about this recipe! I love gyoza, and yes, they are quite expensive in the states. I usually get them frozen, but they taste so bland and have ingredients that I can't even pronounce. Your mother's seems so simple and fresh and now I can make them at home.

    Honestly, I love watching you, Satoshi-san and most of all, Okaa-san (Mom) cooking. There's something so homely about her, so comforting and gentle that you can't help but be drawn to her sweetness. Not to mention that liiittle but of sass too 😉!       I personally liked to say "it's not burnt, it's blackened" And blackened stuff is still good stuff :D But I haven't tried cajun seasoning on top of it before...also sounds good!

      Lmao. My whole family says this every week.😂😂 We have 3 kids who have started attempting cooking. Which is why we still tell them it's not burnt,its blackened and delicious! Then proceed to take a big bite. Lol. Never tried the Cajun seasoning. Now I want to.😂😂

    Thank you for this Tabi. I will be back in Hawaii in about 3 years and I hope we can meet up. I want to learn to make gyoza and have all the ingredients except the chives, which I'll get tomorrow. First I want to make traditional gyoza, then I want to make the perfect shrimp gyoza, then tako gyoza, curry gyoza, etc. Cooking is the one thing that reminds me of my favorite class in college, chemistry lab. And I get to eat my experiments!

    I love mama's recipe!! Growing up my mom never really cooked because she was busy all the time but when it is Chinese New Year, my mom would sit down and make dumplings with my dad for me and the family. This year I will invite my fiance to join us. =D

    I'm definitely making these. I've loved gyoza since I was introduced to it in the 70's at a Japanese restaurant called Larmen Dosanko.

    I made gyoza for the second time and the first time I made my wrappers too thin, the second time I over seasoned the filling. Hopefully, third time's the charm!

    Okasama.....Hontoni domo arigato gozaimasu! ❤️ I truly, truly, thank you! I absolutely LOVE to watch you cook!! Brother, I always use my mom's recipe, which thankfully, has the same exact ingredients as your mama--except I use 1/2 kurobuta niku and 1/2 gyu niku. I also do not use as much garlic--but that will certainly change for my next batch. I also never knew to leave the gyoza in the pan, without flipping it--and the added extra sesame oil on top? What a great touch!! Oh, and the boiled gyoza.....yum! Definitely going to try that out too! I will take more care in wrapping my gyoza to make them pretty the next time. I'm always in a hurry, so I literally just fold them in half. I've learned so much more about gyoza from this video! Thank you!!!
    Brother.......your mama has some some awesome knife skills! I totally cheated a couple of days ago, when I made gyoza......I used my food processor. ☺️

      Tonkotsu Ramen is something we don't make at home normally... Not just because it's not easy to make, since it takes time and a lot of effort, the tonkotsu broth should be made for more than 20 servings, I guess! But I'm actually happy to hear that some people outside Japan get really interested in making Japanese food ;)
