  • Hello Friend, we are going to spend the day cooking so we can eat dinner for a month! Lets stock the Freezer with some Dinnertime Freezer Meals to make life a little easier. Its garden season and soon we'll be preserving so that amounts to either tons of time and long days in the garden or kitchen and some freezer meals are just what I need!
    Here is what we are making:
    Buffalo Chicken Mac N Cheese, White Chicken Enchiladas, Stuffed Shells, Cottage Pie, Beef and Bean Burritos, Meatballs, Pork Sausage & Quinoa casserole and Pork Dumplings.

    MeatBalls:
    1/2 cup Italian bread crumbs
    2/3 cup milk
    1 lb ground beef
    2 cloves garlic minced
    1 large egg beaten
    1 tsp salt or to taste
    1/2 tsp black pepper
    1/2 tsp onion powder
    1/4 cup parmesan cheese
    Cottage Pie

    Quinoa Bake
    1.5 cups quinoa cooked
    1 lbs plain pork sausage
    15 ounce can chickpeas drained and rinsed
    6 ounces pesto store bought or homemade
    1/2 teaspoon garlic powder
    1/2 tsp oregano
    1/2 tsp rosemary
    ½ teaspoon onion powder
    ½ teaspoon salt
    ⅛ teaspoon freshly ground black pepper plus more for topping
    3 cups spinach leaves
    1 cup shredded mozzarella
    Pork Dumplings
    One package wonton wrappers
    1lb ground pork
    1 thumb ginger minced
    2 tsp minced garlic
    4 scallion whites sliced
    2 tablespoons coconut aminos
    Salt and pepper
    Fill wrappers with about a tsp of prepared filling
    Fry in oil for one minute per side or until golden. Add a splash of water to pan and cover to steam for 3-4 minutes

    Kelsey your little boy is absolutely precious and so adorable! It really takes me back to the sweet days of my little boy 🙏(who is actually graduating from High School today).

    We don't really have the freezer space for full meals so I'm always a little jealous of these videos. 😅 One "freezer prep" thing I do like to do, though, is to make out a dozen hamburger patties at a time (3 lbs of meat, 1/4 lb each patty) and freeze them with waxed paper separating each one. It's SO nice to be able to grab a frozen patty out and have a hamburger in just a few minutes that tastes way better than the prepackaged ones from the grocery store.

    Everything looks wonderful! I definitely need to make the enchiladas! When I make stuffed shells, I don't cook the shells. Just fill them ... some won't be usable if they are closed, so you can either set them aside for another use or run them under warm/hot water until they open a bit... and continue as you did. I add a little extra water to the sauce. The dish can then be frozen or, if being used within the next day, refrigerated. The shells will cook in the oven. I also make my lasagna with uncooked noodles. The regular ones, not the "no cook" ones.

    I saw a RUclips short last night where they made crockpot cheesy chicken and rice burritos That had green chili, tomato, onion, taco seasoning and a few other taco toppings and it made 18 burritos. It looked really good and I will be trying these. But really it's just a reminder that crockpot meals are helpful during the gardening season as well and I'm always looking for new ideas because food boredom is a real thing in my life.

    Meatballs is where I used to hide 🙈 veggies 🥦 🥕 - blitz in a food processor any veggies and the kids will be non the wiser … I have even put a whole head of broccoli 🥦 in a pasta sauce and got my stick blender and made it a smooth sauce … worked a treat

    everything looks delicious. you are one busy woman and your family is very lucky to have a mother like you. i was wondering if you have a rosemary bush, if not i'd love to send you some dried rosemary if you would like to have some. have a nice day. look forward to another video.

    Thank you for the meal ideas! Kelsey, my five kids aged 7-16 all really liked it when I would put looseleaf lettuce or greens directly on the table (no plate) at dinner and let them grab their own. This was not any ingenious thing I came up with, but rather just a mom of many little kids trying to get some veggies on the table. I’m not sure why it worked but they really would eat almost any veggie this way. We also would do a game of dinosaurs eating greens. I’m not sure if this just worked for my family or if it would work for other kids too but I thought I’d mention it.

    This was a great video, with some great ideas! I like to do freezer meals also. I don't do a full day of multiple recipes, just don't have the energy. I like to make 3 or 4 of a recipe if I am making something time consuming, and have one for dinner, and put the others in the freezer for other easy nights. I only mess up the kitchen once, and it really doesn't take any longer to make multiples than it does to make one. You have some great ideas there, and I will be trying some of them.

    Great looking recipes. I love freezer meals. I found myself having the same pan issue didn’t have the glass pans and didn’t love aluminum. I found some square stainless steel “cake pans” with lids on Amazon and bought two sets. They work perfect for my needs.

    I wrap in aluminum foil first and then cover all around (top, bottom, sides) with cling wrap. I've had meals last over a year in the freezer that way and you just remove the cling wrap to put in the oven.

    These all sound fantastic and have definitely inspired some ideas. I'll probably do a big freezer cooking day here soon for this same reason.

    I have found if I forget to thaw a frozen casserole ahead of time, I can put it into the oven just as I turn the oven on, and it isn't such a shock to the glass since it preheats along with the oven temp. I haven't had any shattered glass pans doing this.

    All the recipes seem delicious - never made the Asian varieties but they also look good. Love to eat Asian in a restaurant but just have never cooked any but your recipes seem easy enough for me. Thanks!
