How To Smoke A Brisket!

    The recipe:
    -Get yourself a brisket flat, point or a whole packer!
    -Trim to your liking and season with Course Kosher Salt, Fresh Cracked Black Peppercorns, and a bit of Garlic Powder.
    -Put on the smoker using charcoal or your favorite wood. Keep temperature as close to 250F as possible for the duration of the cook.
    Wrap at stall (I generally just wrap at 160F IT whether it's at a stall or not) using aluminum foil or butcher paper.
    -Once an internal temperature of 205 is achieved, remove brisket from cooker. Keeping it wrapped in your foil or paper, wrap it in a towel and put it inside a cooler to let it rest for TWO (2) hours.
    -Slice and enjoy!!
