You are my favorite sausage guy tied with two guys and a cooler, this italian sausage was standard until you did your marinara with bacon , my wife is Sicilian/Italian i showed her this video she laughed out loud !! in sicily we sometimes braise this kind of sausage in tomato for a few hours sometimes with other cuts of pork with a few other ingredients
Oh God! Pork Brains takes me back to the 60's when I was growing up in Flint MI.... My Dad use to make Pork Brains & Scrambled Eggs.... I was soooooo great................ The butcher shop in Greenville has them... 🤠

Just keep working on how you load the casing on the tube. The technique and the knowing look are very essential. Not to mention the "twoodly" sound. Not sure how you spell it.😊
To clear up a question that was asked in the video, its Steer brains your not supposed to eat due to the danger of Mad cow disease there were a bunch of restaurants in Indiana that used to sell fried cow brains. They had to switch to hog brains because the packers stopped selling the cow brains due to the risk. As far as the Bones tires something weird segment.... its all fun and games till someone breaks out the canned brains.

I’ve been making caseless sausages. Roll em up tacky like a ween and send it. Seasoned cast-iron grill grates are key. Super tender I like them better than cased. You should make a Thuringer brat with eggs and cream. Michael Rhulmans charcuterie book describes this in detail. A must have!
Had pork brains & scrambled eggs quite a few times when I was a teenager & loved em. Just have not had them in a long time. As for that Jowl bacon.... It's one of my favorites !

Always love the sausage videos as well, as said, always picking up something... never thought of the sausage pizza idea with the coil but would make a great app... cut it up like a pizza like Bone's suggested, then stick in a bunch of tooth pick... instant finger food!! I make pork and fennel patties for my family and they like them more than beef burgers. I have used that same recipe for meatballs with the addition of an egg and breadcrumbs. I have smoked italian sausage too...... I like pork and fennel LOL Gonna do a pork and fennel meatloaf with a cheese core on the smoker one day
There is a restaurant near me that serves Italian sausage pigs in a blanket with marinara dip. It's delicious and I think that could be a good dish to put on your channel. ;)

In the Midwest I have seen this as a very large patty vs a coil but looks so good!

Pig brains scrambled with eggs and cheese would have made the brains edible. I ate them as a kid with my dad. Tastes like sausage!
