We have the same way of cooking beef caldereta, brad. The only difference is instead of adding water, i use the beef stock that was used to boil the beef. Keep on keeping on, man. Lingaw kaayo everytime I see the cateel boys do their own thing.

Simmer one hour then add onion and garlic and then raw potato and carrots for another hour more. The idea of beef Browning and keeping all the liquid from beef juices in one pot.
