Im not famous at all! but yes indeed, Chef AJ does have alotta pride in his work, you can just tell when someone loves what they do.. I wish everyone will eventually find their work to be something they love. I love my medic work and my patient care is top notch because of it. I was in Las Vegas for a convention. I was invited to have dinner at La La, and the food was excellent! I enjoyed the Fried wontons, General Tso’s chicken & the Pad Thai noodles were my favorites. The host ordered 10 dishes and they didn’t disappoint. AJ came over to our table and I mentioned that I saw him on your video. I’m glad that I I was a guest and didn’t have to pay for the meal.

Vegas conventions are always like that, take clientele for dinner or a gathering with free food and in a penthouse hotel room . etc. Its all part of trying to get business.
Wonderful food video, Danny! One of your best, IMO. Chef AJ is a most hospitable gentleman, and seems like a great, nurturing soul. If I ever go to Vegas, I'd have to visit his restaurant. I'd get the lamb and the drunken beef for sure, along with some seafood.

I have dined at la la noodle a few times. Loved their noodle soup and the fried rice w lobster and eggs! Services were great! The lamp chops look yummy.

Do a little Googling on him and his Kogi BBQ trucks in Los Angeles. All those fancy food trucks that are everywhere now. Blame Roy. He was ground zero for that reimagining of those trucks that were only on construction sights and movie locations.

I am not making this up. There used to be a restaurant in NY Chinatown that featured "Boiled things in Broth". I asked the waiter what things? he said "Very good things, I bring you a bowl". Now I had to try the things. I don;t recall exactly what things they were. But he was right. Very good things! I';m pretty sure that the dish was designed to whatever they had an excess amount of something they did not want to waste so 'things' probably changed day by day. BTW those Lamb Chops look AMAZING!
There used to be a place near chinatown NY that offered on menu "kow kai" and "see don" both of which kinda means "whatever"... so when the customer says kow kai or see don, the waiter shows the part of the menu that lists exactly what that is.
the wings look OK. try the asian wings at wolfgang puck bar & grill in mgm grand they're amazing!! Re: lamb dish, chef AJ clearly stated you need to eat it with the veggies together for a balanced blend of all the spices. I normally don't like lamb but will order it next time I go.

im telling you! as an ordinary, common man, I am not used to food elevated so much!!!!! The lamb chops for example, Chef AJ told me which state it came from, and that the lamb's WEATHER WAS COLD !!! Chef AJ's expertise knows no bounds...
I went there a couple of weeks ago. Just got done wonton soup and eggrolls. They were ok. Your food looked much better. I was alone and they sat me at bar. Have to say service was not good. I felt like I was an inconvenience. I’ll try the place one more time but I do not want to sit at the bar again.
ha! the first time I went there and made a video, they sat me at the bar also. BUT the big difference is, if I dont find the bar to be suitable, I would say so and insist on a table. What makes the difference? the distance from my face to the other end of the bar. So the hostess said there is bar seating for one, I said I will take a look at the bar. I went and it was pretty darn DEEP, so I agreed to the bar and made my video. Nothing wrong with bar seating as long as it suits its purpose. in that video, at the end, two VIPs came and had Chef AJ's Secret Stuff, they hugged chef AJ upon entering and everything, they sat at the bar to my left. I work in a restaurant and I have to say where I work, our bartenders are excellent. Thru would never let a single customer sit there staring at the bar. Maybe I just hit them on a bad night. But I think I still will take a table next time.
thanks for the discussion, I enjoy. For me I rather be left alone after I order my food and get it, as long as the waiter is within flagging ability. I find it very rare that a need would arise where the waiter comes and asks me if things are going okay. it is usually AFTER they ask or way before they ask. like I need a napkin, and I cant wait till the waiter comes so I flag him down for a napkin, Drop a spoon same thing, waiting for the waiter to come ask is just not ideal. In chinatowns, I would just walk up to the station and get whatever I needed myself, chopsticks, napkin and etc.. is that considered rude or bad? to some cultures maybe, but to me, I dont attribuite such "lack of service" as bad or good, I just do what I gotta do and get things done... in the extremes I have example of the time I was at ping pang pong and the waitress was nowhere to be flagged, not for 20 minutes, I ended up walking to the front counter and asking for the check myself and paid it there myself, on my way out, still no waitress to be found, maybe she was doing number 2 who knows. but on the other end of the spectrum, in CHINA I went to a fancy restaurant, and the waiter literally stood 4 feet from the stable and just stood there all that time, providing every little service as if I was like a patient in a intensive care unit (but conscious) Super annoying and lack of privacy... I also deviate from the usual idea of "good service" in that I find it annoying when food dont come when it is prepared, they tend to wait till one thing is finished while my next thing is sits under a heat lamp. I rather it come when it is ready, then I can take a picture of all of it for social media. so is something bad or is something good? it all depends on who you are as a person

After dropping your food, the server is suppose to check back with you to make sure everything is ok, you got what you ordered etc. as I restaurant person I just expect some kind of service in a tourist driven area like Las Vegas. We are in a touristy area so we really concentrate on service. Maybe I am spoiled. I really don’t want to chase people down for things I need. I totally understand if the place is busy. I’m not too upset then. But when the place is slow then yes service should be top notch. If it’s not, then I guarantee workers are loafing on the job.
u know, all they really need is a button on the table to press if I need anything, like on the airplane u know? I dont need the waiter to come interrupt me for no reason just to "see if im okay" to me, that is not better service. better service would be coming in 30 seconds after pressing the help button!
You know there was a time that "chicken wings" were thrown away by home cooks. It was too much trouble to cook for so little meat. Now, it's a delicacy...go figure.
It had sauce, and when sauce gets under the fingernail, there is no amount of public hand washing that can get your hands clean. you gonna need the nail scrubby brush.

Those green things are chives . They are a member of the allium family ie chives, garlic , leeks , shallots.
