Just a tip, you can put the powdered sugar on after sandwiching them, cause after a few minutes the jam soaks up the powdered sugar in the center and they look the same :) that way you don't run the risk of smudging the nice sugary layer on top!

I tried these out yesterday as a test run for Christmas cookies, and wow are they good! They’re sweet and yet not too sweet, not too soft and not too hard. I’m so happy I gave this a try, I’ll definitely be making more when Christmas draws nearer. Thanks for sharing!

I grew up running to the Swiss Bakery in N.E. Philly for my father on Saturday mornings. After paying for our order the Oma behind the counter would always hand me a linzertorte. Thank you for sharing such a great recipe with such delicious memories:)

I never had this cookie before but during the holidays my mom & I make pumpkin pie we actually made it by scratch because I had leftover pumpkins from Halloween plus my mom had leftover butternut squash so my mom & I cooked the pumpkin & squash down with sugar & nutmeg & cinnamon then when it was cooled we whipped cream cheese half & half & eggs, vanilla more cinnamon & nutmeg until it was smooth poured the mixture into some pie shells baked them until they were solid & the results came out great. Usually I would use canned pumpkin but we had leftover pumpkins from Halloween so we started from scratch.

I looove Linzer cookies, and Linzer torte! I grow my own lingon berries (red currants) for many recipes, but these are at the top of my fav list, as I use lingon berries in my linzer! I like my linzer cookies even more if they are a day or two old. Then the flavors really grow together! Your version looks delicious! My family uses lemon zest as a flavoring in the dough but I have to try them with almonds, it sounds so good!

Hi Gemma! Since you're festive desserts from around the world, I though maybe you could do a South African one too? So many different cultures are blended together in this country, which makes for really interesting and diverse cuisine. Two popular Afrikaner desserts for all sorts of special occasions are Hertzog cookies (a jam-filled tartlets with a creamy coconut topping), and Melktert (translated as milk tart, its a bit like a lighter malty custard tart flavoured with cinnamon). Yess thank you Gemma I recommend piroshki they are buns made from a yeast dough and stuffed with meat potatoes cabbage eggs and other fruits and vegetables there are a variety of fillings and they could be baked or fried

A tip for these, into the dry ingredients dough you can add poppy seeds or chia seeds. Makes cookies look prettier and the texture improves tenfold without affecting the taste

Yess thank you Gemma I recommend piroshki they are buns made from a yeast dough and stuffed with meat potatoes cabbage eggs and other fruits and vegetables there are a variety of fillings and they could be baked or fried
