    A lot of you already know baozi (包子)- steamed buns. They are so fluffy and soft, have delicious filling inside. But not that many people know about Hua Juan (花卷). It s like a steam bun but instead putting the filling inside, we apply some seasoning on it and make it into a roll. Today, I will show you 2 different flavors - Scallion with salt and pepper flavor and sweet sesame flavor. It is fun and easy to make. Let’s get started.

    INGREDIENTS (make 12 buns)
    - 500 grams of all-purpose flour (Amazon Link - geni.us/LFEu)
    - 300 grams of milk
    - 2 tsp of yeast
    - 2 tsp of baking powder
    - 2 tbsp of sugar
    Ingredients for Sesame Roll
    - 3 tbsp of roasted sesame seed
    - 1 tbsp of butter or lard
    - 3 tbsp of sugar
    Ingredients for Scallion Roll
    - 1/3 cup of diced scallion葱花
    - 2 to 3 tsp of toasted sesame oil (Amazon Link - geni.us/z2lX)
    - 1 tsp of Jiao Yan (salt and pepper) or to taste
    Ingredients for Jiao Yan (Salt and Pepper)
    - 2 tbsp of coarse sea salt
    - 2 tbsp of Sichuan peppercorns (Amazon Link - geni.us/4CjfC7)
    - 1 tbsp of white peppercorns (Amazon Link - geni.us/GdF0A)

    I just tried this recipe and it turned out so delicious. It was my first time making steamed buns so this recipe was foolproof! The rolls rose beautifully, and the texture was just perfect. So simple and will be making more tomorrow, since my family loves it. One quick note was that I only had active dry yeast on hand (rather than instant yeast which the recipe calls for), so I made sure to put the yeast + sugar into warm milk and let it proof for 8-10 minutes.

    I want to tell you that I really like your channel!!! I made the recipe with black sesame seeds and I really liked it!!! +++
    The quantities in the recipe are only enough to make 12 loaves of bread, I don't know what happened but I weighed everything correctly?!
    Next time (tomorrow) I will double the recipe so I can freeze it. :)

    Thank you for such detailed and delicious recipes; you are so great at explaining in detail not only the steps involved but a bit of the history is each dish, along with your own food memories. It makes each dish less daunting and more personal.
    I’m going to make these this weekend. I am probably the only person who doesn’t own a stand mixer, so I’ll definitely get a workout kneading the dough! That’s okay, it means I can justify eating more than one because I burned so many calories making them.

    I'm starving. Every time I watch your videos, even if I've just eaten, I always end up starving. I love your cooking. Just a tip on the proofing: you can avoid the worry of different proofing times by putting the all the buns into the steamer at the same time. Just have the first batch wait on the counter while you make the second batch. There will still be a time gap between the batches, but it won't matter as much if you keep them out of the warm steamer until they're all together.

    ive been looking for the name of these buns since 2018 when i went to china on a school trip and the people on the farm where we stayed made them for us everyday. I am sosoooooo excited to try and make them!!! thank you so much!!!

    You are so talented. I love those techniques and I’m going to try it with cinnamon rolls and make them like this. Yes I remember buying those steamed buns on the street corners when I lived in Flushing Queens. I love them I actually grew up eating those in the Caribbean where we have lots of Chinese.

    I usually make about 6-7 flower-shaped bun in advance and put them to the fridge. And those cuties will become my breakfast during the next one week.

    I made these tonight, using oat milk (malk) instead of milk, and Miyoko’s vegan butter instead of dairy butter. I cannot eat cholesterol due to my gall bladder. Oh. My. Gosh!! I put one of the scallion buns in a bowl and added Japanese curry over it, and I’m now in a food coma... Thank you SO MUCH!!

    I had so much fun making these. I've made your popcorn chicken and biang biang recipes as well. So delicious, and my roommates go crazy when i toss on my apron and break out the flour lol. I didn't have scallions or the sichuan pepper salt mixture, but i did have sichuan pepper, garlic powder, black pepper, basil and a light brushing of yakitori sauce. For the other half, i made cinnamon sugar instead of black sesame sugar. The results of both sets of rolls had me dancing in the kitchen! Can't wait for your next recipe!

    Thank for your recipe sharing!
    Tryed this (first recipe, half dosing) with modification(avoid milk and its products, lack of fresh scallions, without sodium acetate) : 3 percent hot boiled water with sunflower oil emulgated with blender. Couple of freezed scallions and spoon full of cut and air-dryed scallions applyed dry.
    I've steamed it in a pressure cooker same time you tell to do. And like the result.

    Good thing I checked my yeast - I noticed it was not foamy after stirring so I started over with a new pkg from the store- mine was not as pretty but came out so good- it proofed perfectly -and steamed perfectly- was so delicious!

      They have steamed custard buns at chinese dim sum restaurants. It's incredible! So no, not crazy.

    Hi Mandy! This recipe is delicious and is now a family favorite. Will this bun recipe rise or work well with filled buns? (ie custard/salted egg yolk filling or meat filled baos) I really love the quick 1 proof method since it saves so much time.

    I did the sweet version but inside i put cinnamon and sugar with little chunks of walnuts. They were like steamed cinnamon rolls 😋
