Which type of METAL doesn't contaminate at those temperatures? Did u test it?
If the fish is cooked over 10 min, it's overcooked and dry and no sauce will help

Wow, very cool and very very interesting way to cook salmon, usually im more the raw fish with wasabi and Kikkoman style but i would smash that im sure, those kids from the village are very lucky to enjoy such masterpieces :) when they grow up they will surely remember and miss the food you provided for them, Amen Brother :)
