Oh …very nice technique! Seasoning is not enough to bring excellence to any dish …TECHNIQUES are CRITICAL for the outcome . This beats any takeout any day …. The details of the HOW and WHY is crucial to making this go from good to OMG , I think I am in heaven eating Japanese Fried chicken …the potato starch dusting of it and not have dredged chicken pieces is KEY to create the lightness of this dish. I am going shopping for chicken legs and deboned them ! Dipping this into some Kewpie Japanese mayo is also great. You got to get Kewpie Japanese’s mayo …worth the money ! Very nice, Ryusei! Useful tips on marinade and twice frying with different temps. I have had spicy karaage many times with chili or togarashi powder, maybe that was a a local thing in Fukuoka where I lived for many years? I know there are many different variants of karaage in different parts of Japan. Ofc also excellent with lemon. Arigato!

Unfortunately my last bed died when I had to go away for a family funeral up in Sweden. But now I have a new one going and it seems promising. I love the taste and the crispiness of the veggies. And it is easy, I use wheat bran here instead of rice bran. Also will make a small batch of Okinawan fermented tofu, red miso to start and vodka to stop it, no awamori here. It comes out as a fine French dessert cheese. It takes 3 weeks, will be ready for xmas to enjoy with friends and some red wine. Keep up the good work with posting.

Chicken is my favorite meat by far. Especially fried chicken. I couldn’t get through this without my mouth watering like crazy. Gotta try making this. Or at least find a Japanese restaurant. Got a real problem in the states, where there’s a lot of franchises that make fried chicken, but they rarely any of them do it well.

I really love the crunchy texture of some tsukemono without the strong sourness of vinegar like regular western style pickles. I love Karaage chicken! I will use potato starch from now on. I think the twice frying technique is great. I knew about it for french fries but not for this. Very well done. For anyone curious - if you substitute tamari for soy sauce, you will have an entirely gluten free dish. It's my favorite fried chicken either way.

Love my Japanese wife's karaage - better than KFC or any fried chicken I've had from the south (USA) or anywhere else. She usually uses a pre-made batter, but I prefer when she does it from scratch. Best fried chicken ever, and you can use it as a base for many other recipes like orange or ginger chicken.

There are not disadvantage. But, if I say one thing, I put potato starch after marinating to remove the excess potato starch. It makes karaage more crispy and we enjoy the flavor of the chicken more. Thank you for watching and asking!
