I remember as a child in the 60's Mrs. Lindstrom next door neighbor she looked like TV Mrs. Harriott and everytime she invited us, kids, over it was always Macaroni and cheese but the tuna added made it so memorable, to this day I have always served it with the tuna.

I made this verbatim this weekend. I did use the eggs. Came out great. My wife always liked a crunchy toppings on her Mac and cheese, but i was making this with kids in mind. The only issue I had, and I'm nit picking, but it needed more pepper. That's on me. But very easy, except I grated north of 10 cups of cheese.
Some different techniques. But I'd like to try and incorporate some of them. I've never thought about adding eggs. I agree with you that whole milk is the best. My choice of cheeses would be different. I need to get one of those garlic graters. I've always had trouble with chopping up garlic. I like to do things my own way, but I'm always willing to learn or at least try tricks that are new to me.
I have cooked with Morimoto, Jean-George, Ariane Daguin etc at the French Culinary Insitute NY. I've thrown away every recipe and live by yours. It's so exquisite in the taste and my tastebuds are singing... .

I made this (added truffle oil) and it turned out amazing but it took forever to heat up. I made it one night in advance (didn’t bake it) and then tried to bake it as instructed at 350 for 10-12 minutes but I ended up having to keep it in the oven for almost an hour for it to be fully heated. I’m making it again so just want to know what to do next time? Should I heat it up at a higher temperature? Thank you love your channel!

@@Smashing_Bumpkin You can fry up some cut up bacon and also use some of its fat on the breadcrumbs, then sprinkle it on top of the casserole, it applies to all baked pasta products other than lasagna. Believe it or not, it's always better to eat something as simple as Mac n' Cheese at home, not out in some eatery, which usually doesn't have the texture and the quality is constantly a gamble and usually they're no better than the offerings that come in the blue box. The good news is that you can make the sauce up to 2 days in advance (omit the cheese in the sauce if you're going to prepare in advance) and just prior to baking, you can easily reheat the béchamel with additional milk and add the cheeses to the reheated sauce.
Looks amazing. Home made mac&cheese is almost always better! In my family we put thin slices of tomato under the top cheese layer. Adds some colour and a pop of extra flavour.
Pretty simple and looks great. I would love to get that lasagna/casserole dish deep enough for that meal but can't seem to find one. All of mine seems to be too shallow and my recipes eventually bubble over because of being too full. Help! Where did you get yours?

I think you can add toasted breadcrumbs on top for additional texture on 2 dimensions, crunchy and soft; creamy and rough.

Could you make this ahead of time, and then just put it in the oven for the 20 minutes when ready to serve?
Would probably need to be in longer to heat it up properly. I would cool everything first and maybe even keep things separate before cooling.

So that whatever is cooking in that water gets properly seasoned. Also helps to retain color when cooking veggies.
