Watalappan හදන්න Try කරා - මගේ parentsල ආස වෙයිද?

Thought I would try a new series of cooking Sri Lankan foods I've never tried cooking before... First was Watalappan. I tried guys... :( Looking back, there were quite a few things I did wrong but hey! It was a decent first try. Let me know if you guys want me to try cooking something else.

That jaggery mixture was too watery. It has to be thick & dark. There are videos of making Watalappan using sugar if you can't find jaggery. Nice try btw :) I hope you'll be able to nail it next time.

Hey Yashi! Just a quick tip: if you put some hot water into the coconut and let it rest for a while, it can help you get more milk and make the coconut softer. Hope that helps!

I am also made watalappan, it also didn't had that foamy hole consistency , I think for that foamy consistency we should beat eggs until it become foam, next time try to add 1/2 coconut milk and 1/2 condensed milk . also add caramelized sugar to the bottom of the pan

1)The secret tip is using the minimal amount of water..
When you add juggery grate it into thin pices and then heat it with coconut milk til it s a bit thick and let it cool down before adding it to the eggs..don t add water
2) before adding cardamoms to the juggery and coco milk roast them, it intensifies the aroma and the taste 10 times.
and add some nutmeg too(ONLY VERY LITTLE).. And make sure you strain the mixture before adding it to the eggs...
3) use a steamer by keeping a water filled pot on the cooker and keep a iron cooling rack inside..that s really good rather than an oven
