    if you guys want to have the best tagine,you have too cook it on low heat,olive oil,enough meat and fresh vegetables.and of course spices +garlic.avoid to add water in the last 30 min because the sauce must be creamy not watery just make sure to add enough water in the beginning.also Tagine in the mid south is much better than the one in the north. hope you guys have a great time in Morocco.       I'm from the north and I will say our tajines are better for fish dishes while the ones in the south are for the meat/chicken dishes

      ​@AyaAyyoo well tagine is a in fact original from sous the high atlas. Because when we came from belgium to morocco in the 60 70 80' no one heard about tagine's in the big city's before...it was only in the houses of the people that came out sous the people of north morocco they used only marmita and it was not known in the whole country only in south-morocco. And in belgium the arabs and the rif didn't want to eat from the tagine they where aware to be not delicious as their aluminum pots 😂 this is not a myth my dear brothers and sister in morocco but fact's... and if you don't believe me ask the very old people that are 90 years old or more... they gonna tell you the true facts, not the young ones who things that it was always like today bcz it was not a lot of things have changed since i was born in belgium in 1963 and we wanted some day tagine when we traveling to Casablanca Rabat Mohammadia al-Araïch Tanger Kasr kbir Housaima etc.. but no places served us tagine so we at only fish as our second favorite diches and at home in casablanca our dad or mom conjured up delicious tagines of meat, chicken, minced meat, sardine balls, mussels or eggs with dried meat, but tagine amlou argan was not known at all in any city in Morocco except a few villages around Agadir.

    To avoid burning the tagine you need to buy a small metal perforated piece that we put under it while cooking

    The secret for not burned Tagine, is to place metal plate under Tagine and have it on very low flame, it takes one hour to one hour and half to be cooked. Tagine is suitable to cook tough cuts of meats as in most of the times it's slow cooking method

    Tajine on Kevin Steiner way is the best, the meat, chicken or just vegies need to be cooked one by one, step by step on the fire, like onions with meat first then you can add more onions, then carrots, zucchini, then potatos, then tomatoes and peper at the end or even raisins or prunes, this way the veggies with strong flavours (like onions) don’t cover or kill the other flavours. Omg I forgot something Aubergines never go into the Tajine with other veggies, you can cook aubergines only woth onions and tomates that’s it.

    There is a nice competition for who can cook the tagine well. I think Mor Akro has become a skilled cook at the Moroccan tagine

    Cut onions circular slices and put them on the bottom with parsley and cilantro sticks to protect everything from burning and give tagine a unique taste.
    Always use olive oil.
    Remove all the chicken skin.
    If you think it's gonna be dry or burn you can add some water by pouring it on the edges of the cover without opening the tagine.

    I think the most moroccan chicken tagine i like is the chicken tagine with oinon spices and preserved lemons and of course some french fries !

    All you need for an authentic chicken tajine is preserved lemons,olives,onions, olive oil,spices and diced potatoes or cooked French fries that you add at the end when the Tajine is already cooked.

    Well, tagine is in fact original from the High Atlas. Because when me as a second generation moroccan in europe we as famillie visited morocco each year from Belgium to our country in the 60s, 70s untill 80s in that time no one had ever heard about tagine and you can't find it in the markets not even in other cities of Morocco except when it where in the regions of the southern amazigh's the regions of the high Atlas only their you could find tagines on the road by someone.. that's why the sous people brought tagine into the markets in Marrakech because the most are commercials from sous and around like agadir taroudant warzazet etc..! But the other north-african amazighs they don't have that and they do not even knowing about tagine's. The rif regions using aluminum cooking pots which they called marmita likewise Tangier Housaima Nador al kasr kbir Wajda and many north regions, in central Morocco they called it gamilla which cooked on a gas stove or a pressure cooker. Even here in europe, the Arabs and people from northern Morocco, the Rif and wajda and others did not want to eat our tagine before when they where invited, some didn't trust it and say it's okay we are not hungry weird but true, others thought it could be poisonous if the red soil from the tagine ends up in that food because they had never seen such dishes..! They trusted only their aluminum pots 😂 this is not a myth, my dear's but facts... and if you don't believe that then ask the older generations of people who are 90 years or older they will tell you for sure the true facts! Not the young people who thinks that it was always like today. Many more things have changed. I was born in Belgium in 1963 and when we went on holiday to our house in Rabat & Casablanca or by old friends of my parent's in Mohammadia or granparents friends and acquaintances or sometimes in other cities such as Fes Meknes Kenitra al Araich Tangier Kasr kbir where many friends of my parents lived that time in europe etc.. their was no where that they served tajines cause we had grown up with it, our parents prepared for us super large tagines at the waterfalls in oukaimdan or on the beach in al Jadida, with fish, chicken, meat, or meatballs or sardineballs or mussels cooked in argan oil it's a heaven dish 🤤mussels in argan oil and red onions and red olives etc.. oh wow lord thee best !! These where always been our favorite diches till today. And today we see them go to souk to by vegetables to cook a tagine, even the Western people knows loved tagine's and they also loving it to extend 😊👍

    الطاجين اللحم والجزر والبصل والقزبرة اساسي والزيت والكركم والابزار والملح وباقي الخضر تضاف متل البطاطس والجلبان او الشيفلور فلفل حلو والزيتون النار تكون خفيفة يعني أقل شي ساعة الا ربع يكون جاهز بدون طماطم او واحدة وبصحة واحدة فقط الدجاج او اللحم يكون مباشرة فوق البصلة المقطعة وجزرة مقطعة وفوقه باقي الجزر والخضار
