My grandmother was white as snow with freckles. She was from Arkansas. My Dad was raised up on cornbread, greens, pig feet, mountain oysters, fried brains, chitterlings, etc... that is cultural for poor people. You ate everything God gave you, but it doesn't mean you need to vote stupid.
They specifically gave that food to slaves because it was considered the throw away parts. Poor White southerns may have eaten that food too but Black Americans gave these foods their cache... Don't confuse the two cultures.
