Great recipe Greg, and i have a couple of thoughts. A bulb fennel instead of celery? Use smoked oysters AND mussels? We see hot smoked salmon in Woolies from time to time, add that in chunks a couple of minutes after the other fish? Just ideas, but worth considering. As for the fish, if you can get it, try blue eyed trevalla, a firm Tasmanian white fish. We get it at our fishmonger in Cronulla and always use it for fish pies, so I am sure it would work brilliantly in this soup.

The best Seafood Chowder I ever had was at Fisherman's Wharf San Francisco ( The best part is it was served in a big scooped out Sourdough Round Loaf as the bowl ) Yours looks pretty good tho 👍

Lovely très chic cookin’ here ‘ey GregO for this thyme of year and your mirepoix skills have come along in leaps and bounds… I’m glad you utilised the smoked muscles (mussels) as opposed to oysters in this variant and if that was salted butter, definitely no need for further sodium additive… I enjoy a touch of Tabasco in my version along with some freshness at the end in terms of either minced parsley or dill. I've tried mussels 1 time..🤑🤑🤑🤑it was poison...but I love oysters clams,squid,c(alamari ), shrimp crab lobster,but mussels gross I suppose you could substitute..love ya gregO
