Black Market yeast will be a thing soon, I'm currently experimenting with a sourdough starter. Bloody time consuming but if it works there'll be a video this decade
it's one of those techniques that you'll get eventually, took me a while. At the end of the day as long as you ended up with beautiful buns, you should be happy x

I love the taste of hot cross buns, but I can't stand the fruit in them, so I alway pick out the fruit, before buttering them, unfortunately this doesn't always end well, as quite often I'm left with very little the butter and eat. But then last year we found in Aldi Rhubarb and Custard flavoured Hot Cross Buns, they didn't have all that yucky fruit in them so they were definitely worth a try, They were unbelievably good, they have them in again this year thank the Gods or who ever. One down side of course I've no idea how to get the custard flavour if I tried to make them, but at least I do know how to make the bun so half the battle is won, lol lol
It's unfortunate that you don't like the dried fruit, but as you say you can leave that out. Chocolate chips could work? I imagine the custard would be creme pattisiere or pastry cream, I made that for my pancake day recipe, just leave out the extra cream.
