    Thanks so much for sharing! Today I went through my pantry and some of my freezers to “expiration date sort” food & then planned my weekly menu accordingly. I’m really trying to not waste anything this year so staying on top of expiration dates is one way I’m doing this. This also keeps me more aware of items that I need to stock up on when I see sales.

      Great idea to sort by expiration date and see what needs to be used up! And yes, that's a great way to prioritize sales and what you need to restock too!

    I love that you do so many leftovers! I intentionally plan leftovers. It’s a huge way to save money and avoid food waste.

      @@joyfullythrivingmade homemade hot dog sauce today for hotdogs and am adding peppers and mushrooms to the leftover sauce and having spaghetti tomorrow..love finding creative ways to use leftovers..love your videos!

    Thank you for sharing. I love watching watching what others are eating. It gives me different ideas. For example another youtuber that I follow made some healthy cookie dough. It's made with one can of northern beans rinsed, 1/2 cup of peanut butter, 1 tsp vanilla and 3 tbsp of brown sugar or maple syrup. You blend it in your food processor. You then chill it for a few hours. You can add chocolate chips, cranberries or nuts to it. I added chocolate chips and cranberries to mine. My husband and daughter love it. I will be making it again. Looking forward to your next video.

      That sounds like a interesting recipe sounds like she was going for Gluten Free. So in looking at this farther I am assuming its a No Bake Recipe? Anna In Ohio

      @@buckeyedav1 Yes you just keep it in your refrigerator and grab a spoonful when you want it. I am thinking next time to scope some on a cookie sheet and flash freezing them. That way I can keep it in a freezer bag and take some out when we would like some. I love the idea that it taste great, that it's high in protein and fiber.

    Okay, this is a longer post......BUT........the enchilada casserole looks SO DELICIOUS, and I will definitely be adding that to my family's meal plan rotation! I use enchilada sauce to make our beef and bean burritos, but honestly, your enchilada casserole has the exact ingredients I use in my beef and bean burritos, but seems even easier to put together.
    Also, your salad with the black beans and sour cream/salsa dressing is genius! That is so simple and looks so delicious and easy. I have no idea why I have never thought of it. I am going to use that for quick lunches for myself throughout the week.
    Another thing, I love your premier powder hot chocolate idea for hot chocolate! I just ordered some from Amazon because I LOVE hot chocolate in the winter, but I do not love all the carbs and sugar. So, this seems like a great way to get some extra protein without all the carbs and sugar.
    It looks like you tend to eat low (lower) carb. How do you avoid eating all the delicious treats that you make? The cookies, the homemade breads, the buckeyes, etc.? I also love to bake, but then I also love to eat what I baked (which is the issue!).

      Another one I do is taco pizza! Pilsbury crust. Bake a few minutes to set. Take out of oven. Spread microwaved refried beans. Light layer of enchilada sauce. Cooked ground beef. Shredded cheddar. Tomatoes. Black olives. Yum! Top the slices w shredded lettuce and sour cream. So good! You can even make the pizza crust from scratch. The rest of stuff is typically pantry/freezer.
      Likewise I’ll do a bbq pizza! Sauce. Brisket or pulled pork. Cheddar. Yum.
      Different ways to package and serve common ingredients.

    Another one I do is buy the bone in quarters or thighs when they are on sale buy one get 2 free. They usually are pre seasoned. I come home, 2 cups in water. Chicken. 25 minutes on high. Shred and then use for casseroles or just bag and freeze shredded chicken. Great for wraps. Easy rescue meal to microwave and add bbq sauce or jar Alfredo or add to a box pasta. Or chicken broccoli rice casserole.
    Then I take the bones and go back in for broth.
    The sales are typically about a dollar a pound. Great way to stock the freezer on the cheap.

    Love to see your meal plan and actual meals. I make a meal plan every week… it seems that I always have at least one day a week that we deviate from the plan due to unexpected events, etc. Can’t wait to try your granola recipe!

    Tfs, I did very good this past week as well with the fridge, freezer and pantry challenge.and today I didn't have to cook my neighbor made a big batch of chilli so she shared her leftovers with me and my family

    The Panera sip club is awesome. My retired folks use it for a social “meet up”. No one spends money and they Have a quick outing w friends and very week. Unfortunately not one convenient to my house or office.

    This was fun to watch, the protein hot chocolate is a great idea! I’m still having fun coming up with meals from the pantry and freezer, after seeing your pizza I think that’s a good idea for one night this week😁

      If you do any apps like McDonald’s they often have free reward deals. I save them up for no spend months! I also bank my Sam’s rewards and use those in January or to pay for my membership which is due in July. Having extra money in no spend months is awesome!

    Last night I started a chicken/turkey bone broth with the carcasses I had saved in the freezer... I'll use it for chicken with dumplings, chicken with homemade noodle soup & reserve the rest for futures dishes.
    It's just what's going on today to take my mind off of the fires here. We are fine but can see two of the big fires from our location. 😢
    Pray for the first responders & devastated homeowners. 🙏☝️🕊

    Maybe deluxe baked potatoes w brisket on top? Brisket tacos? Not sure how much you’ve got. But I love the already cooked meat for easy game night meals.
    I’ll dump my cooked meat and spaghetti sauce in crockpot. Put a pot of water on the stove. Have the pasta out. We walk in, I turn on the stove while doing the put your coat away. Get your shoes in right spot. Waters boiling. 7/8 minutes and pasta is ready. The sauce scoop and serve. It seams simple to have it “staged” and ready. But one less step in that crazy transition time.

    I’m having a struggle. Kroger has 80/20 ground beef for $2.99 a pound. Great sale. I like fattter for meatloaf. As hard as it is, I’m passing this week. I was just going to batch cook meatloaf muffins for my freezer for quick rescue meals. It’s a challenge to pass.
    Week 2 no spend! Week 3 starts next week and I don’t think I’ll need a trip to store - except Diet Coke!!
    Challenges make us stronger!!

    My enchilada casserole is a bit different. Enchilada sauce on bottom. Just a thin layer. Corn tortillas. Meat mixed w enchilada sauce. Cheese. Tortillas. Meat mixture. Cheese. Corn tortillas. Pour rest of sauce on top. Cheese. This freezes awesome! My kids aren’t a fan or refried beans. I serve my enchilada casserole w can corn and Mexican rice. Sides fill up the teens!
    My Mexican rice is the 4321 recipe. 4 cups water. 3 tablespoons tomato bouillon. 2 cups rice. 2 tablespoons of minced onion. 1 tablespoon garlic powder. Stir well. I do in my rice cooker but instapot works too. I love this recipe bc I can change up my 50 pound bulk rice and gets me away from rice a roni or knotty packets. It tastes just like the rice you get at a Mexican restaurant.

    Looked great. Just last night i saw a recipe for skillet lasagna that uses a pound of pork/beef mix from America's Test Kitchen. They claim it only takes 30 minutes and it did look good. Just thought I'd pass that along

    Do you can during the winter? Canned a long time ago, but need to do it again with a new canner. Just want to get a little more stocked in case.

      I get bad in the winter w canning. I mostly do broth. I want to do more meals in a jar but haven’t tried it yet.

      Good question! I typically do most of my canning in the summer because I do a lot of salsa and jams.

      @@joyfullythriving that’s what I do mostly is salsa and jams. I’ll do apple pie filling in the fall. Home canned peaches are the best. But so sticky when making! We vacation in June which is peach season so I missed it this year but want to get back to it.
      I bought a digital pressure canner and absolutely love it! Was a splurge. I should use it more often. I’ve been lazy lately and just freezing the broth.

      It actually is a lot more creamy then you would think! It's not super sweet but I am enjoying it - and it's a healthier option than Swiss Miss, plus I get to start my day with 15g of protein! This is the one I am using. amzn.to/4fOZwH3
